It makes me think how we could customize KK's by having someone make an artistic tile inset and send that off to Dennis to incorporate in to a KK. The sky is the limit with what you could do! -

Re: Pipe Size Info & Orifice Chart (for NG conversion) Great service there. Including both jets. No need for the customer to have to rig a solution. I daresay there are a LOT of customers who have no idea what a jet is, how to modify one, or rig one from scratch. Nor should they be expected to. Good job Dennis.

Re: KK *should* be here by the weekend! That Matte Ocean Green is gorgeous, it would be awesome by a pool, or a water feature. Be careful when you get Royal Oak that you get the lump. Their briquette bag looks very similar. I once grabbed a bag of briquettes by just glancing and not looking. We have lump here in three different grocery stores; also at Wal-Mart, Lowe's, Home Depot, and another local hardware store. So hopefully you should be able to find some in a store near you. Hide your pork shoulder in a cooler with some ice in a place your husband won't go!

Re: KK *should* be here by the weekend! Get whatever lump is available in your stores for your first cooks. You can worry about sourcing other lump, if necessary, later. I'm a wild eyed proponent of a pork butt for your first cook. Why? Because just about anything else you might cook like chicken or burgers or steaks, could be done on a Weber, or a gasser, or whatever. Use your KK for it's highest application, pork butt!There's about eight million posts on these pages about how to do it.

Re: Bronze Behemoth Game On! 2 We had a funeral Friday and I did a hot fast brisket. Last year we talked about Butcher Barbecue Brisket Injection. I believe it was Chris Lily telling about one of his recent comp wins. Anyway I injected with it and let the injection permeate for four hours, marinated in my standard beef marinade for four hours also, then applied a rub and put it on the fire. Absolutely the most juicy awesome brisket ever! Old-timers on the board here are sick of me going on about it, but for newcomers in the last year, the hot fast method is superior to a non-foiled cook. The injection really puts it over the top, however. The flat was as juicy and tender as any good point you have ever eaten. Butcher Barbecue Brisket Injection. Use it. I have another on the fire right now. And don't forget this trick, when it's time to foil, put the brisket in a disposable foil pan and seal that tight with foil. Makes it easier to remove from the fire and to collect all the juice. I got a full pint of juice from Friday's cook!

Re: Bronze Behemoth Game On! 2 I used the new Maverick ET732 last night, it is a very nice upgrade to the 73. The on off switches are external so no need to take the little door off the back like before. The BIG plus is the transmission range! It is so far superior to the old unit you won't believe it. A big improvement. I have made numerous posts before recommending the Oregon Scientific AW-131, which has only one probe, because of its superior, reliable transmission range. The new Maverick nearly obviates that recommendation since you get two probes, one for the meat and one for the fire. For grilling you only need one probe to measure the meat, no need to monitor the fire, but low and slows are better monitored with two probes. Of course if you have a Guru or a Stoker you can just go out and check the meat and the fire at the cooker, or look on your computer. But if you want a remote receiver on your person, this new Maverick is great.

Re: Nearly Ran out of Coals during overnight cook Look in your fan housing. Hold it both ways, you will readily see which way is upside down and that results in the door being wide open all the time. The problem of the door sticking open I believe was resolved quite some time ago. I made a little mod to prevent this; and told John about it, and he said he incorporated a similar mod in the production thereafter.

Re: outdoor kitchen Keep the legs on. Somebody has one without legs and was having some moisture issues with it. If nothing else, the legs give you a purchase point to attach moving straps/ ropes. Can you imagine trying to move this beast without something to grab on to?! And no wheels? It's a no brainer.

Re: Holding low temps The latch thing has caught several new owners by surprise before! Yeah, latch the lid ALL the way shut. The daisy wheel opening down front should be barely open the thickness of a nickel. Roughly. And the top hat just barely off its seat. You'll get it sorted out.

Re: Where is everyone? Cook and post something Dittos to the blessing. I have a Marine nephew shipping out to Afghanistan next week. Tomorrow we have a big family party for him. I've got a 10 pound pork butt on the KK right now, and three racks of St. Louis to put on in the AM. I have the Stoker out there after having used the Guru exclusively for the last year. The Stoker is holding a MUCH more stable temp. And I do believe that is because it shuts off the draft door when the blower is not blowing. The Guru draft door stays open at the opening you set. Setting the exact opening to hold a 225 ish fire is pretty dicey.
