Re: Christmas Pork I have not done this so don't count on my advice; however there is a lot of talk on the forum about a reverse sear they do this with steaks all the time. I guess it would work with pork.. cook the pork low and slow and then at the end crank up the heat to get your crackle....

Re: KK Stability The stainless measures 4' X 4'. Sorry but I don't remember the gauge. I think I simply explained what I was trying to do and the weight of the KK and they picked a gauge that would work. I did ask them to round the corners. Tony

Re: Short cooking time, runaway temps. Wha' happened? I use the same process to light my grill. I have a stoker so I simply set it to 225 and let the KK heat soak for about 1 hour. I find that a bone in Butt takes about 55 minutes a pound. Tony

Re: Another Test of ECC and the new upload. OK I'll give this a try..... We are having friends and neighbors over for a post holiday BBQ. I put a 21 pound pork shoulder from snake river farms on cooked at 225 for 17 hours and pulled at 185. Pictures attached I hope>> Tony
