Re: The "Thermapen" of kitchen digital scales? We use the " My Weigh KD 8000 Digital Weighing Scale" You can find it on Amazon. It's the thermapen of kitchen scales... It even has a percentage calculator so you add the flour hit % and then weigh ingredients based on percent to flour. We love it !!!! Tony

Re: Rotisserie Motor Brackets Waldo, No problem, you will find that you are never alone when it comes to your KK. The forum is full of caring people that will be glad to give you a hand and give out advice, techniques, and tips. It is also important to understand that when you buy a KK you get Dennis as a member of your family. He is there every step of the way. He has taken the time to call me on multiple occasions to simply talk about a technique and pass on a tip. If you have a problem he is the first person that will call you. You really have joined a family.... Tony

Re: Rotisserie Motor Brackets Waldo, Dennis will supply the bracket when he sends the grill.... He has a bracket that mounts to the side of the grill to hold the motor. He will also supply the hardware to hook it up.. So all will be well.... Tony

Re: Thanksgiving 2011 Well we did a 14+ pound bird that was the best turkey ever.... I put it in brine for a day then air dried so the skin came out perfect(I don't like the skin but some of my guests do). I put it on at 350 and drove up to San Francisco to pick up my son from school. By the time I returned(appx 3 hours later) the bird was done to a perfection... I used the new coconut charcoal and boy what a nice smoke flavor... I even have a picture !!!

Re: Thanksgiving 2011 Larry, How long do you think it will take you at 325. I have my bird in brine now and plan on taking it out to air dry in the refrigerator over night...... I want to try cooking it on the KK with some of the new coconut charcoal from Dennis but I've never cooked a turkey on the KK so I have no idea how long it takes. My bird is only 15 pounds.. Tony

Re: Brisket using the new coconut charcoal from Dennis I agree that the shipping adds to the price but I should point out that I am yet to find a full bone in pork shoulder or Berkshire pork anywhere else. Also its interesting to note that one of my 14 pound shoulders weighed in at just over 20 pounds and the second one came in at over 21 pounds. both at $60 each.. Tony -
I know, I know, I know, No pictures it never happened.... But I tried the hybrid approach which means I had to get up at 3:00AM since company was coming at noon. I was lucky to find the KK at 3:00AM much less remember to look for my camera. I used Chris Lilly's recipe but I put the wet and dry rub on the night before so it had time to work into the meat. I loaded 6 pieces of Dennis new charcoal into the KK lit about 4 Kingsford briquets to get things started. heat soaked the KK to 225 and let the brisket go until it reached 165. Wrapped it in foil and cranked the KK to 350. Everything finished off at about 11:00. I thought the brisket was OK not great(and since I have no pictures it never happened). My guests all thought it was wonderful. I'm not sure what possessed me to load 6 pieces of the new charcoal because there is still a lot left for my next cook. The charcoal gives off a sweet smelling smoke and will burn forever!!!! This is the best charcoal around bar none !!! So all I can say to everyone out there thinking about buying some is Don't expect me to leave you any... Tony P.S. I'll do better with the pictures next time. Really I will.... I happen to have two 20 pound pork shoulders from snake river farms to practice my low and slow with camera in hand..

We have been living with Saints for the last 25 years they are great dogs but definitely not a Beagle.. Our current baby girl (named Clare) bounces in at 150 pounds not exactly Beagle size... -

I know that you recommend poking the brisket with a sharp object to determine done-ness but about how long should I expect the process to take so I can do some minimal planning.... Tony

Re: 4th of July 2011 Doing a Peruvian chicken that we cook on the roti. Then doing a pork collar for the 4th.. Nothing better that pulled pork sandwiches and coleslaw.. Tony P.S. Building a wood fired pizza oven in the back yard. I know we can do pizza on the KK but the wife wanted the pizza oven so why not...
