  1. Although these meatballs are simple, here are a couple of critical points. First, i suggest a blend of ground veal, pork and beef. Avoid using turkey or chicken for the veal, both tend to make the meatballs chewy. Also, dont use lean varieties of ground beef, they lack flavor and moisture. Second excercise restraint as you make the meatball mixture. Overdoing the mixing can make the meatballs tough. In fact, i use my hands to knead everything together, its more gentle. Grate onion on a box grater, just like you do cheese. And before you shape the meatballs, saute' a patty of the mixture in a skillet, then taste to make sure the seasoning is okay. Norwegian Meatballs w/brown gravy Makes 30 meatballs, 3 cups gravy For the meatballs--- 3/4 cups grated onion 1/4 cup half and half 2 T corn starch 1 egg 1-1/2 tsp Kosher salt 1/4 tsp ground nutmeg 1/4 tsp ground allspice 1/4 tsp black pepper Add and shape; heat: 2 lbs meatloaf mix (equal parts of ground beef, veal and pork) 2 T unsalted butter 1 T olive oil Prepare: Brown gravy to follow Preheat oven (or your kk if you got one!!) to 400 degrees, Line a baking sheet with parchment paper Whisk onion, half and half, cornstarch, egg, salt, and spices together in a large bowl. Add ground meats, blend to incorporate, then scoop into thirty 1 1/2 " meatballs and place on the prepared baking sheet. Heat butter and oil in a non-stick skillet over medium heat. Roll meatballs between your palms, then brown in the butter mixture (in batches), about 2 min. per side, do not cook through. Carefully transfer meatballs to Dutch Oven, pour off fat from skillet, and return it to the burner over medium heat. Prepare brown gravy. For the Gravy--- Deglaze with; stir in: 4 cups beef broth (divided) 1 T beef base 3 T all purpose flour 1 tsp Kitchen Bouquet Salt and pepper to taste. Deglaze the skillet the meatballs were saute'ed in with 3 1/2 cups beef broth, scraping the brown bits off the bottom of the skillet. Stir in beef base and bring to a boil over medium heat. Meanwhile, wisk flour and Kitchen Bouquet in a cup with remaining 1/2 cup beef broth. Add this mixture to the simmering broth stirring constantly. Cook 5 minutes skimming if necessary, then season with salt and pepper. Pour gravy over meatballs, cover dutch oven, and braise 35 to 40 minutes or until meatballs are cooked through. Serve meatballs with gravy over mashed potatoes or pour the meatballs/gravy over egg noodles. Its really good!!! ENJOY!!
  2. Re: Using a Dutch Oven (cast iron) on the KK? Anyone use the Hey Madmedic, I have a very good recipe to Norwegian meatballs, that i use my grandmothers cast iron Dutch Oven for (its called braising). i will try to pull it out and put it on here, its alot of typing so may take me a while. By the way my old seasoned D.O. is a breeze to clean!
  3. Re: Roti install question Help Tried that too!!
  4. Re: Would you have cooked this Chicken? NO way i would cook that chicken!!!
  5. Re: Roti install question Help Thank you very much for your time i appreciate that. I too have the 50 lb motor. And i think the bracket itself is the problem, the motor just does not sit low enough to line up!
  6. Re: Roti install question Help Here is the bracket mounted on my kk
  7. Re: Roti install question Help Yes i have the 23"
  8. Re: Roti install question Help Here is the bracket mounted and motor installed on it, as you can see the shaft does not line up with the hole. My kk came with just the 2 studs on the side and acorn nuts, no table mounting bracket
  9. Re: Roti install question Help sorry its not sideways!!
  10. Re: Roti install question Help Well i hope this shows my delema, the motor when installed on the bracket is just too high. the shaft touches the top of the square hole, it must be lower to line up with the hole in the kk. sorry the picture is sideways
  11. Re: Roti install question Help And while i am asking, on the left side do i use the square shaft on the basket to go into the hole on the left?
  12. Re: Roti install question Help I dont have a shelf, i mounted the motor bracket to the 2 studs, i assume the spring goes into the motor. I have the motor on the bracket but its not even close to aligning the shaft with the hole in the side of the kk. do i need to file the slotted holes in the bracket so it lines up?
  13. Re: Roti install question Help Oh, i thought that would be a bad idea, so the square shaft with the spring on it goes to the motor
  14. Ok i went to install my roti for the first time, my first question is do i need to knock a hole the rest of the way through on the motor side? The hole does not got all the way through the side of the kk for a shaft to go to the motor. Thanks

  19. Re: Low and Slow With Lump Question I just did a low and slow pork butts using Frontier Lump, I filled the basket, lit it in the middle using a parafin starter block (made by Weber) let it come up to 235 took about 1.5 hrs, put on meat and it ran at 235 to 239 all night, a total of 12 hrs and i still have some left to burn. I am thinking if may be the lump you have.
