wilburpan
I love sourdough bread! Do you maintain your own starter?
PRippley
Thank you MacKenzie, that is fabulous looking bread! I will keep trying. I appreciate the inspiration. Have a great week!
MacKenzie
Yes, Wilbur, I've had this starter for several years now and regularly feed it.
tony b
I've attempted it several times over the years, but invariably let the starter get shoved to the back of the fridge, forget about feeding it, and it dies. Wish that I did more baking, so I could be constantly reminded to take care of it. I know from my CA days, that good sourdough takes a starter that's being going for a long time (years!). Love me some sourdough pancakes for breakfast, too.
MacKenzie
tony, it has been a while since I've done SD pancakes or waffles, but soon now that winter is coming.
PRippley
SD pancakes, I have done, and they were good! What do you think about my chances for finding a decent sourdough biscuit recipe?
MacKenzie
PJ, I have not made SD biscuits but a web search should give you a great place to start.
PRippley
Will try a Google search MacKenzie, my first effort turned out like hockey pucks, and I am not even a Canadian!
MacKenzie
PJ. My first thought was that they may not be nice light and fluffy, eh! I very rarely make biscuits because they are not exactly the healthiest thing to eat.
PRippley
Yep, that is my problem, I am using 100% whole wheat starter and trying not to put a bunch of hydrogenated vegetable shortening in them! I might have to divert my attention to something else, like sourdough bread!
tony b
Haven't tried this yet, because it just popped into my brain as I was reading the posts - what about coconut oil in the biscuits? It's solid at room temperature, like Crisco or lard, but is much healthier. It will impart some coconut flavor to the biscuit, but who's to say that's a bad thing? I make all my rice pilaf with it now.
ckreef
How about coconut flour - saw that for the first time in a store earlier today.
PRippley
I have tried coconut oil in pie crust, it was pretty good. Maybe I will find a biscuit recipe and substitute the coconut oil for the hydrogenated vegetable shortening. Good idea tony b, but maybe I should just stick with sourdough beer bread....😋
PRippley
Coconut flour may work too, trial and error, I just need to gear up for it! Thanks for the ideas all!
