Canadian Bacon

I made that Canadian Bacon for days like today when I wanted a quick meal and besides I have a new toy, a Dualit toaster and what better way to test it out.)
Lettuce, cheese and Canadian bacon on toasted sourdough bread. The bread is only toasted on one side.

MacKenzie, that looks absolutely delicious. We made Eggs Benedict on Sunday with the Canadian Bacon I made a few weeks back. I agree it is nice to have on hand.

Add some mayonnaise and send it my way. Looks yummy.

There was mayo and mustard but it's too late to send it now.:)

Dualit toaster! Santa came early this year to MacKenzie's house! They are very nice, but a bit pricey for a toaster in my book and I LOVE kitchen gadgets! YMMV.

My Cuisinart 4 slice is on it's last legs, I'm afraid. It's been a good one and lasted about 8 years so far. So, I've been doing a little looking on line. Not quite certain on what the replacement might be yet. Most likely will drop to a 2 slicer.

I haven't hit Amazon yet, sounds like I will be surprised at how much a toaster can cost. I'm not buying Midleton either but I buy a lot of good beer, that house on your block might actually save me money tony!

Made another batch of Canadian Bacon for a friend. It was a whole loin, about 9 pounds and Pebbles is ready for the challenge.:)

The loin is curing in the bucket. Fortunately the weather co-operated, it was cold enough to use the Curing bucket and set it out on the deck, then when the temp turned too cold I moved it to the cold room and put a RapidKool in the container. The temp. stayed about 34F for the rest of the cure time.

and now on the grill.

Finished.

My friend came to pickup the Canadian Bacon and we sampled it and sampled it and forgot to take a pix. I can't believe I did that. All I can say is that it was moist and tasty.

That bacon looks so good. What is the recipe for the brine you use? I would love to try this. Oh also i use the oblong cloche to make our weekly no-knead loaf of bread. Breadtopia is less than 40 miles from me.

Thanks, Marilyn, lucky you to have Breadtopia so handy, for me it's hundreds of miles away and in another country whose dollar value is no where close to my dollar value. :smt046 I will post the brine recipe, hopefully tomorrow. :)
