Well done on the article - it all makes more sense now.   It carved in three sections with the point, flat, and bone area on the bottom.

Happy I had an opportunity to give this one a go and look forward to hearing if others find one an step up to the challenge!

Based on that article, I won't be trying to find a bone-in brisket anytime soon. I'll stick to the Prime grade packers @ CostCo - still $2.79/lb.
