  1. Here is a prototype I am working on. It needs a bit of refinement but I think you can see what it does. A disc of 316 Stainless Steel acting as a collar for the smoke tube that is attached/screwed to the mounting bracket (which does not rotate at all) and the set screw in the collar prevents the vertical chip tube from rotating. Dennis, are you watching?? A pretty good retrofit for existing Cold Smokers.

  2. Got everything working. It took a while, but now that I have figured everything out, and have all the pieces, it is actually very easy to set up. Tried thighs the first night. Will go for a higher cook temp next time.and done. definitely the juiciest chicken I have ever tasted. Almost think it was too juicy. I didn't know this was possible. The next night I did a whole chicken and kept it at the same temp. Since this was a larger piece of meat it was cooked longer and I was happy with the results. looking forward to many more spins.

  4. As mentioned before my wife and I lost everything in the Valley Fire, except what we had in our vehicles. Shortly after we were invited to dinner with friends/family. Not wanting to show up empty handed I thought I would make a dessert. Well it needed whipping cream and here we are with no mixer. I remembered the 'Redneck' jokes and put a whisk in my drill motor. Worked great!

That looks pretty good cheers for the recipe I met these Japanese tourists in town one day and they were lost as I had the day off I said I would show them the sights of Perth in their hire car they totally loved it little did I know they were high executives looking into our iron ore industry and we're staying at the best place in town after the day they invited me back to the hotel and pulled out some sake they had brought with them from japan let's just say we all got pissed had a great night and I passed out on the floor lol Outback Kamado Bar and Grill

  6. It's looking like it's becoming a bit of a tradition now... Last year I didn't get any money shots - hope this makes up for it!! 5kg suckling pig Rubbed in salt and pepper and stuffed with garlic and ginger On the KK at 275 (although R2D2 decided to be at 285 but no worries) Very long pig!   7. Got a pork neck and made up an injection of pineapple juice,apple sauce ,brown sugar and honey dijon. I went to town injecting it then gave it a good coating of Yardbird. Vacuum sealed it and put in the fridge .I did say I was going to try bread decided on the Cuban made my starter see how it turns out tomorrow I guess [emoji4] . Outback Kamado Bar and Grill

  8. Ok so I did something wrong because the bread isn't as high as I thought it would be, might have pressed down to much because it did rise up. Going to let cool for a few and let you know about the taste, still going to make a Cubano sandwich unless taste is off! Garvin

  10. I have done a lot of things in my life but welding steel is not one of them. When I built my rolling cart for the 19" TT KK, the only wheels Tractor Supply had were the swivel caster wheels. I ended up putting 4 of them on my cart. Normally a cart like that has 2 fixed wheels and 2 swivel wheels. Trying to move the cart with the 4 swivel wheels, all going in different directions, was like watching the Three Stooges or the Keystone Cops. I laughed at myself every time I tried to move it outside to cook. I tried to locate 2 fixed wheels to make it right but couldn't find a pair to match my swivel wheels. So I decided to have two of the swivel wheels welded in a fixed position. That would involve having to slide the KK off of the cart, onto a pallet, so I could bring the cart into work for the maintenance man to weld it up. It sounded simple but I was have a hard time finding a pallet(s) that matched the height of the cart. I was working by myself and didn't want to try and lift the KK. That's when I remembered..................30 years ago I tucked a small 120 volt welder in the back of the shed. Hey................Maybe I can do this myself with the KK in place????? Went to the shed and found the welder under a huge mouse nest. Cleaned it off as best as possible and plugged it in.....nothing! Gave the box a swift kick and it started humming. Bingo! Tim the Tool Man has nothing on me. Welding can't be that hard!!!! Borrowed a welding helmet from work, hooked everything up, got the grill & cart into position and proceeded to weld away. It took me about 10 tries but I finally managed to get a bead going. Only got the welding rod stuck on the wheel another 10 times. Went through 15 welding rods.......... but finally managed to get 2 good spot welds on each of the caster wheel frames. Here is the good laugh...........my finished results: It did the trick....the wheels no longer swivel and the cart is manageable now.....and the great thing is that you can't see the welds from a standing position . I do not plan to quit my day job!!!!!!! Too much fun.

  13. We love pan fried dumplings. Eat them every time we go out for Chinese. Mrs skreef made some at home once as part of a challenge cook. Will have to try this recipe sometime. I also love hot sake.

The pork turned out great the bread it was my first time not to bad pulled pork with some extras on fresh Cuban bread gave the pork the left over injectionloaded it upand plated the bread turned out great crunchy but niceand this has to be the best pic I have taken lol Outback Kamado Bar and Grill

  27. It was great - bones picked almost clean and at the end split the skull and shared the brains - some of my friends were a little squeamish about it but all agreed it was tasty!   29. Replace slot head bolt with allen set screw. Machine 1/16" off its length. I might try to cut a radius to fit the vertical CS Chip Chamber.

  33. Your guests can enjoy cooking their food with you and you don't have to worry about who wants their food this way or that way. It is also a table I could not build on my own, it would be a great father and son build since my dad is the one with the skills!

This one will be a much easier sell, especially because of the positive experience with the first and the fact that half of my family and Northern VA has invited themselves to my Make Memorial Day Great Again event, and I'm now down to one 23" grill. That just won't do. This one will be an easy sell. This particular grill isn't listed on the site yet. Either on or about to be on the water. But yeah, gonna call dibs.

  38. If you get to the Asheville, NC area, check out the new Sierra Nevada brewery there - it's stunning! The HVAC ductwork in the bar is all copper, as are their pot brewery tanks in the above shot. Crazy! The patio area out back is just as insane as the rest of the place! Plus, they have a big natural amphitheatre for doing live music, too! Check out the big ass firepit on the patio - it's about 10ft in diameter. And don't even get me started on the crazy beers that they ONLY have at their taproom there!
