  1. First KK pizza of the season. Heat soaked the KK at 500F. This is day 5 of the pizza dough. The recipe is soooooo simple and it is done in the food processor, takes maybe 10 minutes total. Topping were cheese, fresh chives from the garden, calabrese, mushrooms and fennel and anise seeds. Ready for the grill. It was pitch black outside so no on the grill shots. Baked, 9 mins. Sliced. The second one off the grill.

  2. S&S has a video out there where they put a bike with one of their motors on a dyno machine. They tested it 3 ways. Straight pipes, Straight pipes w/ baffles, Full exhaust with 2 single mufflers. For mid range performance that is the order from worst to best. There is like a 10 hp difference between straight pipes and full exhaust. Add a cross over on full exhaust I think you gain another hp or two. This really only counts in the mid range rpms but that's where you want the most performance riding around the streets. Of course who cares, mine sounds kick ass when blasting around and at 113 ci and only about 600 lbs it has plenty of go juice. Also I can still keep it fairly quiet if I go easy on the throttle.

  5. I have a DigiQ-II. I only use it on low & slow cooks that are over several hours long - mainly briskets and pork butts/shoulders. I just like the "security blanket" aspect of it, especially if you want to do an overnight cook - you'll get more sleep not worrying about it. Needed? Nope! I owned the Guru prior to buying the KK; otherwise, I probably wouldn't have bought it. To your other question about "hot & fast briskets" - everything is the same, except you cook them at 325F - 350F degrees. Shortens the cooking time a lot, since you can power through the stall better at these higher temps. I've done both techniques and there isn't a ton of difference in the results. I get more variability based upon the quality of meat that I'm smoking than the temperature that I cook it at.

  6. I use a cyberQ as a thermometer.. Love to monitor my cooks from my iPhone but don't use the fan. The probes are commercial/industrial quality and last.. the mavericks and simular $40-$60 units have little weenie armored cables that just don't last if you cook all the time.

  8. Keith, if you use the weights recipe it is a piece of cake if you follow the instructions. You can do it and you will be amazed as well as everyone else when you tell them you made your own crust.

  9. Just a little experimenting night. I knew the roasted potatoes would fall out of the basket without a slight modification. lol Used some foil tape to seal up the ends. Real good cook! The potatoes came off first and the chicken/ pork shoulder CSR's finished about the same time so I just pulled them last. Everything was sooo good especially the roasted taters. They tumbled away in the basket and were well oiled and seasoned prior to going in. Thanks for looking! Definitely lots more room for more food. I used 2 pairs of OctoForks for this cook.

  11. I went without the heat diverter, and use them on either main or upper rack. My understanding is that unless flames are licking them, the stones survive. That's also my experience.

  16. It is pretty amazing what will fit into a small car, especially if it is a box on 4 wheels. I stuffed a 50gallon gas water heater into the MINI and closed the hatch! My Honda 600 was a pretty small motor yet enough power to tow my 350cc Yamaha single MotoX bike (chain removed). I made a bracket to bolt onto the rear bumper that had a front axle (motorcycle) attached and then removed the front wheel of the bike and clamped it onto the car. Funny seeing a car towing a motorcycle that has more power than the car

  17. Ok so I made two pies and I really have to get my stretching technique down could not get the 12inch round I was going for the crust was better than good but not great. My sourdough starter is three weeks old but the tang was there so I will do this again, next up is whole wheat sourdough bread coming this weekend. Garvin

  19. Why did you think the 6.5CFM fan was not cutting it.. I used to choke the 10 cfm fan they gave me back by about 80%. I use the CyberQ as a thermometer.. I never use the fan. We use the fan in the factory to smoke test the grills.
