  1. There have been a lot of delicious looking salads submitted, but this has been a salad on my to do list for well over a year. Thai style beef salad. Very healthy and just what I was craving after my 12 mile run on Saturday. I started by lighting the kamado because this is a pretty quick cook, at least as far as challenge cooks go. First I got the ingredients for the dressing. Fairly simple and shockingly no oil! First time I have ever made a salad dressing without oil. Also, half of the dressing is used to dress the meat specifically after it is cooked and sliced, which made the meat over the top flavorful. Whisked that together and set it aside. Then I assembled the rest of the salad ingredients. Chopped up most of the ingredients, tore the living butter lettuce (I love thst lettuce) sliced the red onion a pickled them a bit because I have an issue with completely raw onion. Checked the grill and yup, it was ready. Seasoned my flank steak with some salt, pepper, garlic powder, and cayenne. Adhered with some sesame oil. Grilled fairly hot and fast until it hit 127 let it rest for about 10 minutes before slicing. Then assembled it all and poured the remaining dressing on top This was really, really good. My husband completely scarfed it down. I'd definitely make it again.

The last month or so Ihave been doing one 12 mile and one 6 mile per week. Its my alone time. And thank you! Wish I could have shared!

  7. I've tried Humphrey's and liked it, but it's costly to have shipped here and no one locally carries it. Some good news, I recently scored a couple of bags of Wicked Good Charcoal's Weekend Warrior at Hawgeyes BBQ in Ankeny. I thought they were out of business after a major fire destroyed/heavily damage their facility. So look for them at your local ACE Hardware, it really is "wicked good." From their webpage " You can order the same great "Weekend Warrior Blend" bags through your local Ace Hardware Store. If you don't see WGC on their shelves (or website) speak with the Owner or Store Manager and request that he/she order bag(s) of Wicked Good Charcoal through their Ace warehouse ... 8. I have been watching some of this. ice hockey is not real big down here. hard surface hockey is but we do have ice rinks where teams play not at the level for the Olympics yet but you never know .I'm really stoked at the rise of women's sports . They are doing better then the men take the Australian women's soccer team .who would have thought and they play hard and fair .usually I go for the under dog .but I reckon the Canadians have the skill but most importantly the phycological advantage after being 4 up to go 5 .Team U.S.A .will be trying extra hard which will force errors .if they have any chance they need to compose them selves and their goalie stands up on the day..because the Canadian 4 scorers are going to be on her constantly Outback kamado Bar and Grill

  9. Great sammie, MacKenzie. Getting caught up from the chaos of having my PC go wonky last week. Did manage to get in a nice cook on Sunday to take advantage of the almost warm weather. Thawed out some veal short ribs that I'd scored during a sale on D'Artagnan a while back that were taking up space in the freezer. Rubbed with yellow mustard and each rack got a different dry rub. Just for grins. Onto the KK at 250F, indirect, with smoker pot of post oak, pecan and apple chunks. Pulled at IT of 190F. Plated with black garlic mashed potatoes (sous vide) and some coconut curry green beans. Favorite was the Plow Boys Bovine Bold. (sorry for the misoriented pics - I'm blaming this silly PC! And the uploads are taking for-ev-er!)

  10. A quick little cook today because I was making bread at the same time. This loaf did sing to me. Go Canada Go. Sweet potato fries and a grilled smoked meat sandwich. The meat is from a batch that I made in Nov.

  11. So sorry, I didn't realize you were in a head to head competition with the man from down under. Be careful, there's a reason why all those people were put on that island. Don't show your full hand until the end.
