  1. [mention=3675]johnnymnemonic[/mention] this time around, I did a wet brine for 24hrs. Pulled, rinsed and patted dry. Sprayed with some duck fat spray and rubbed with Kosmos Dirty bird and let them smoke with the ribs at about 235 until up to temp. Before the cook, I let them sit for 2 hours on the counter to get to room temp which tends to server as my air dry. Usually I’d crank up the heat or throw them under the broiler for a few minutes after as well, but this time it wasn’t needed.   2. Well I'll be darn, that fella looks a lot like his cousin just offshore here. I remember watching a show that depicted this Au species as endangered, I believe it was on Tasmania, the big island on the eastern shore if I'm correct. Like Poochie said it's a favorite, however that little swamp/pond critter just ain't got enough meat on the bone for me. I like em 1 1/2 lb to 2 1/2 lbs for the table, then again every once in a while someone pulls up a giant in the mid 20's, a lobster big enough to crack your arm. They're most generally released again after he's shown off a bit, the feeling being is if he's avoided the trap for 75 years it might be bad luck to place him in the pot.

  3. Mudbug, crayfish, crawfish, a marron has to be the first cousin of a crawfish. But they do look much bigger than the average crawfish. The live price here in the heart of crawfish country is around $2 but as high as $4 a pound. Boiled go for $5 to $8 a pound. They have drive though places here too. You used to be able to get some nets and catch them like I did back in the Jurassic day, but now people own the ponds and won't let the public in. Some humans like to leave their trash behind and messed it up for the rest of us. Anyway, they are still one of my favorite foods on this planet.

  6. There were two statues in the park that faced each other for years. A male and a female. One snowy, cold Christmas Eve a magical wind blew through the park and both statues came to life. Male statue: This is incredible. I’ve been looking at you for 30 years. Are you thinking what I’m thinking? Female Statue: You better believe I am. Let’s do it! So both statues go behind the bushes and sure enough, the leaves and branches start flying. After about 20 minutes, they take a break and speak. Male Statue: That was wonderful. Do you want to do it again? Female Statue: Oh yes, but this time you hold down the pigeons and I’ll **** on them.

  8. Glad to hear that everyone is OK. I had a breakthrough case back in October. No symptoms, but having to quarantine for 10 days was not fun!

  9. She had light symptoms and we have all had it I think. Since we are all vaccinated, we had no issues. Only annoying that we can't visit anyone. Thanks for asking !

  11. I like snow for about 10 minutes. Thankfully we get about 1" every 5 years here. You should see Cajuns drive when we get ice on the roads. It's off or wide open no matter what the road conditions. See, I didn't say coonass...oop!

  12. M My eldest daughter tested positive for coronavirus 2 days before Christmas so we were not able to be with extended family as normal. The grocery store happened to have fresh chickens in a pinch. So it was garlic and herb roast chicken for Christmas dinner. Asparagus grilled on the kk. Roasted organic fingerling potatoes in the oven. Worked out well. I didn’t do the best job of spatchcocking the birds. Not all of the breast was on top. Also I did not probe them in quite the right location. Upon checking them with the instant read thermometer they needed more time and threw off my timing for dinner.   14. In your brewery must of been stressful lol .we have had no cases for like 6 months .Perth has locked its self of to the rest of Australia. Then just before Christmas we had a backpacker rock up that visited every place in town and we are wearing masks Sent from my SM-T835 using Tapatalk
