Cooked a nice simple tasty lunch on the 16 today. Cooked direct 300-325, thighs were marinated for a couple of hours in teriyaki. I hit the poblanos with a torch to blister off the skin, stuffed with tomatoes, onion, italian seasoning, topped with mozzarella
made a breakfast pizza on the alfa.
its really too hot for slinging pizzas outside in this weather. i want a brick oven built into the wall of my kitchen so i can do this in air conditioned comfort wearing only my underwear…

nice. while you wait for the replacement, this is a good time to make your own Tare sauce and get bamboo skewers (thin spikes and paddles) sized for your grill. a squirt bottle to spray sake or water. an uchiwa fan if you want to raise charcoal temp, but i don't really use one..
Several others in the Forum have participated with me as well - namely Jon and Tekobo. It's nice to share the local stuff with folks all over the world. I would have never experienced "purple crack" (Tasmanian pepper berries) if it weren't for sharing with Aussie or Suya Pepper Rub from Tekobo.
The cook went really well. I put the brisket on the KK at 10:00 PM Friday evening. The KK stayed steady and cook well overnight. It finished about 4:00 PM Saturday. We let it rest for about two hours and then ate it. My wife and kids enjoyed it. I reheated some yesterday (Sunday) for a block party. It was devoured almost instantly and the feedback was very positive. For the block party, we also made some smoked Mac & Cheese.
