  2. Who says i don't already have one, or even two of them !!! You should get three just to stay ahead of me LOL Just kidding I really like to keep things simple. I don't have time for complicated. I actually have two loafs in the oven proofing right now. Our baseball team has a long road trip today and i am staying behind to shoot the softball game. They are convinced they will win if they have a loaf of my bread in the dugout, hey it worked for them last year so i have to make them one. Last years semi final went 16 innings and they were starving by the 14th inning, I had given a loaf to the trainer before the game and when they started complaining they were starving she gave the loaf to them. They like it lol

  3. I now have three Gilson test sieves, purchased over the last decade. The #20 arrived yesterday, so I made some careful extraction estimates. We have an older Wolfgang Mock Grain Mill, that most closely resembles (and takes the same replacement stones as) the KoMo Fidibus 21. A comprehensive US source is Grain Mill, Flour Mill, Grinder | Stone Burr, Impact & Steel Burr Mills at Pleasant Hill Grain. They also recommend the Royal Lee Household Mill if one's exclusive goal is the finest possible flour. I would contact them for buying advice; the newer Mockmill 100 & 200 probably represent the best value and performance, if one is not put off by their appearance. I adjusted my mill to grind as finely as possible without gnashing stones, then tested one and two passes of 500g hard red winter wheat from Central Milling, with each of my sieves. The extraction percentages are shown in the above chart. One can buy Gilson sieves from sources such as Amazon, or directly from Gilson. It's worth consulting Gilson first, to understand options. These sieves are expensive but remarkably well-made. They fit perfectly into a Vollrath 69080 8-quart heavy-duty stainless steel mixing bowl, universally available from restaurant supply stores and Amazon. These bowls are the best quality I know; we have multiples of many sizes. I have a friend who cheaps out whenever he thinks it doesn't matter to free up an extra $40 for one night's wine, and his wife is still gnashing her teeth that he didn't get Vollrath bowls. The quality difference is striking.

  4. @Cheesehead_Griller i just got the meter 2 plus in the mail today. stuck it in my armpit to test it but no time to cook on it at the moment. the bt range is now 250ft but you still need a second wifi device for unlimited range. but you can deep dry this thing now and cook it over fire.

  5. That's the problem with the Bluetooth based probes. If you just have the single probe you need an iOS device (old iPhone, iPad, or iPod, etc.) to sit next to it. That device will put the data in the cloud and allow you to access the info from any other device via the Meater app. I always had an iPad close to the smoker. I could then view the data on my phone from anywhere. This was one reason I upgraded to the Block. Plus, I bought the Block brand new for $100. Couldn't pass it up.

  7. Took my goths to Safari Park this weekend. Stopped by the far stand on the way home. Got some amazing fruit and produce rainbow carrots, asparagus and sweet white corn on the cob along with pork tenderloin My oldest told me that the asparagus “popped” in her mouth it was so fresh. Great summer meal

  8. Another desem loaf. 60% fresh milled hard white wheat + 40% fresh milled yecora rojo + 25% desem. 80’ish percent hydration. This is Alan’s Bread from Flour Power, but at higher than the 75% hydration called for. Yecora rojo is a bit thirsty and I think the low hydrations in Flour Power correspond to the recipes labeled as “beginner.” Apparently beginners require stiff dough 🤔.

  9. Thanks @Troble@tony b I too often do long low and slow cooks. And I always clean the bottom ask out before each cook. Per DL suggestion I now only lite one section and let it go. Current thinking is, as long as I can get and hold the temps I want it really doesn’t matter. Whats on the menus for Memorial Day? Did some Hanger Steak today and it was melt in your mouth tender.
