  1. I have not run out during L&S, however, I have burned up a whole basket when banging out a few pizzas for a party. My basket has the high handles that won't allow the deflector and roti basket at the same time. I plan to cut them off and have them re welded so it will clear. (my basket also has the long bottom that hangs below the firebox - at least it did, I made a modification to that previously.
  2. Dennis, Please confirm that a ver 2.18 would be a cooker that has a firebox that hangs on the ring, in other words, not the firebox that has the legs that reach the bottom of the cooker. BTW, Happy Birthday!! and here's to many more!
  3. May I ask why you need to remove it frequently, or at all?
  4. It looks like there are more "joints" in the 19.5 than the 23' date=' but they have been in the 23 for [i']at least a year.
  5. Somewhere around hear there is a fella selling weather proof covers..... I use your cover, but as you know, you cannot keep all the moisture off. I was fully exposed the first winter, no problems. I have been under a car port for last winter, but hope to be on a new patio for this year. I don't know who has had one in freezing conditions for the longest, but I have never heard about any tile loss.
  6. I'll throw out my theory. I think if you started with a cold cooker, you would get some flow; hot air rising pulling in fresh air with the cooler air (relatively) in the dome descending. As the cooker gets hotter it will cause an ever shortening convective loop, until it stops. It certainly tells me that a leaky draft door will not allow the fire to continue to burn unless you have a leak up top also.
  7. I tested this yesterday. I had a 400 - 425 fire going and shut the top damper, I left the bottom wheel open full. I checked it about 2 hours later and the fire was out. Not a glimmer or a glow, no sign of life. I don't know what kind of leaky cooker the gal had that suggested this method, bit it will not work on a KK.
  8. I really don't think airflow or moisture retention is a problem @ pizza temps. I typically have the lower wheel wide open and the door pulled out with about 2 inches between the door and body. The top is up a couple inches, overall a very high-flow, low moisture environment. I would be afraid to crack the lid, as the flames may want to come through the opening and make things interesting.

Cedar Planked Mashed Potatoes 1 untreated cedar plank soaked in water 2lb Yukon Gold potatoes 4 Cloves garlic, minced 1 small onion sliced 1 tsp salt 6 tbsp softened unsalted butter 1/4 C whipping cream 1/4 C ranch dressing 1/2 C grated white cheddar cheese 4 cheese strings, cut into 1/2" pieces 2 tbsp chopped flat-leaf parsley salt and ground pepper Place potatoes in a large pot and cover with cold water. Add garlic, onion and salt, bring to a boil over high heat. Reduce heat and simmer for 20-30 minutes, or until fully cooked and tender. Once cooked, drain potatoes and return pan to heat. Shake pan to remove excess moisture from potatoes, garlic and onion. Remove from heat. While still in the pot, mash together potatoes, garlic and onion. Stir in butter, cream and ranch dressing and continue to stirring until butter has melted. Let cool for 20 minutes before stirring in cheeses, parsley, salt and pepper; mix well. Transfer to bowl, cover and refrigerate for 24 hours. When ready to grill, mound chilled mashed potatoes on plank. Firmly pat and smooth potato mound. Heat grill to medium-high (~ 400F); place plank on grill and close lid. Plank-bake for 20-25 minutes, or until mash is golden brown and crisp on the outside, and hot all the way through. Carefully remove plank from grill and transfer to a heat resistant platter. Top with extra butter and serve. 5 smilies [stars] @ my house!
  11. I would say yes, your stone is probably getting really hot being direct. I have always used the heat deflector on the lump basket. I think someone else has posted about going direct with the stone, but that doesn't allow much margin for error (besides I don't have the flame guard for my Fibrament)
  12. You leave the peel on, start it meat down and then turn, so the peel is down for the finish. The peel* starts to sag away from the meat when they are ready to pull. The peaches were great, but we seemed to like the 'naners most! *don't eat the peel, well I guess you could, but I didn't....
  13. The theory is the higher in the dome the better browning you get on the top. I have only used the upper grill, so I can't give you any feedback on the difference between it and the main grill.
  14. 2 bananas (not too ripe) 2 tablespoons sugar* 2 tablespoons ground cinnamon* 2 tablespoons honey Vanilla ice cream, for serving Bourbon or other liqueur, for drizzling, optional Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes. Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired. *Note: qty of cinnamon and sugar is at least twice what you need for 2 bananas.
  15. Cut a peach in half, remove pit. Spritz with some EVOO. Grill flat face down for a couple minutes, till satisfied (depends on fire) Turn over sprinkle with cinnamon and some Turbanado sugar, grill while longer. Serve with whipped cream or ice cream. I'll add a picture next time I make 'em.

  19. I'm gonna say I went around 250 - 275 for a few hours, and a lot of that time was uncovered. I did them alone, just for the fun!
  20. Do you deliver? Perhaps you could poll your old split-mates, they may not frequent this site.
  21. Which side is your wife on? Just go that way. I would put them on the KK. I did a pot full a couple months ago the whole time on the KK, they were great! Besides, how many of your friends or family can make beans that way?? Everyone has a stove...
