    Sav - no Aussie in me, but I LOVE Australia! I spent quite a bit of time Down Under some years back and have been back several times. I'd say all told I've spent about 18-24 months Down Under. My first time with you good people I landed in Perth and bought a fly/rail pass. Went all across the continent and had the time of my young life. This was back in the early 80s when the TV show Dallas was in its second season. Everybody was always asking me, "Hey Mate! Who shot JR?" LOL!! I'd go into a bar and I couldn't buy a drink. "Hey, My Shout Mate!" If I heard that once I heard it 10,000 times! And you boys drink like fish! I'm a whiskey drinker and you boys do know how to throw back that whiskey! I learned that Foster's is for tourists and export. Victoria Bitters ruined me! Hard to find up here in The States. I learned to LOVE Morten Bay Bugs ... they are wonderful, simply wonderful grilled! And the Sheilas .... ah Mate, the Sheilas! Lovely ladies one and all! If I didn't have real significant business ties here in The States, I'd have my fat rat butt headed Down Under!

  4. Dennis - hey, put me down for a 32" drip pan when we finalize details on the 19' High Cap. Do you have a similar trip pan for the 19" High Cap? If so, put me down for one as well!

    Well, I just went into a sugar coma mentally eating all that good looking food! Love that asparagus. Kudos! Looks like you have a KK BB 32 Black Pebble just like TheBeast here in OKC. Great cookers, huh?

  10. Montana - welcome to The Club! That is a beautiful blue KK you have ther, absolutely beautiful. And what's this stuff about a messy deck? Deck? What deck? All I see is that new KK and a great looking cook on the grates! Have you talked to T-Works customer service to see if they have straight probes? When I bought my CyberQ I asked about straight probes (Thanks! To Dennis) and they shipped them with the unit. Kudos and congrats on that gorgeous cook!
  11. tony - Papa Murphy is my go to pizza when time is tight and I'm needing a KK pizza fix. It's good as is, but Papa Murphy's on TheBeast is hard to beat. And it all because it's done on the KK!

  13. qundoy - good looking bird! I love gumbo ... any kind of gumbo is great. Even tho spatchcocked bird look like roadkill, it my favorite way to do a bird. Only when I'm trying to impress SWMBOI's friends/family do I do a whole bird. Nicely done. KUDOS!

  17. wibblylee - that is one very fine cook! You should be VERY proud. And if this your first cook, Buddy, the sky is the limit for you! As for the 250 temp the next morning, something was open. To my mind, if Robert told me to go stand on my head in the corner when using my controller, I'm upside down in a BIG hurry. tonyb's advice on the damper setting is also spot on.
  18. For once, I'm not hosting any of the NFL games as well as Oregon vs. Ohio State! No firing up TheBeast for this fat rat! I'm just driving and then sitting and drinking beer and eating whatever is fixed.
  19. Paul - welcome aboard and welcome to The KK Addiction! You are in for one very big surprise when you get your KK! To compare a KK to a mass market kamado is like comparing a rowboat to a super carrier. We love seeing pics of cooks. Be sure to add yours! You are gonna love your KK!
  20. Doc - I've been meaning to tell you a BIG THANKS for your OP on this thread. I did an enchie cook based on one of these turkey roasts and by all accounts, it was a hit. Great taste, easy to smoke/cook. I'll be doing this again and thanking you every time I cook one off.
  21. dstr8 - tell your folks to stay inside when it gets this bad here in the central US. I'm freezing my tush off here in OKC. I can't believe the wind chills we have here and those are nothing compared to what your folks must be feeling! Geez, tony ... gotta scrape the sidewalk and drive just so you can go get your teeth scraped, huh? Be careful up there with these wind chills being so low. Frostbite in a BIG hurry! Be safe and take a wee nip to keep you warm!
  22. Thanks for the sentiments, Wilbur. My cooks here can't hold a candle to yours, but they are tasty. I'm just a single guy who likes to have a few folks share in my cooking. You have an entire family to cook for! I like your position a LOT better than mine! Be well and stay warm!
  23. Geez, tony! MINUS 7!??? You can[t even breathe in that weather! Hate to tell you this, but I think the Criminals finally got what they deserved. Winston needs to go the the NFL and find out what life's all about. In my world, he's nothing but a coddled thug. I used to teach at Florida and always admired Florida State until Jimbo and the Gang sold out to protect that low class thug at the QB position.
  24. Geez, is that ever right! It simply ain't Thanksgiving unless OU/NU is on TV! I hope this new coach NU hired does the trick and gets NU back to the Devany/Osborne glory days.
  25. dstr8 - you're dadgummedstr8! Chicken tastes, for the most part, like a mouth full of sand. I think there are a lot of those turkey roasts in my future!
