The beauty of a tung oil/ in the wood finish is that you can also spot repair high traffic areas. One only needs to scotch brite the area, rub in the tung oil for 15 minutes, wipe clean and let react with oxygen overnight and it's looking like new.. I have it installed in everything from beach hotels to mountain chalets, sports clubs and a bars.. Plastic/ polyeurathane finishes require that you sand out the entire room.

Low temps The secret to low temps is to not to light much coal and close down the top until you can just barely see smoke leaving.. if you have airflow, it won't go out. 175-180 is do-able. Never tried lower..

OTB vs K7 cooking area.. Yes that is a K7 grill I've just made up for someone who can't seem to contact their grill maker..

The OTB's grill is down about 4" from the lip.. so the actual area above where your meat sits is MUCH larger than the K7's grill. Remember that you can't put meat close to the edge of a K7.. while you can fill up the OTB.

I believe the breakdown of the nasty stuff to collagen takes place from 165-175º But I gotta tell you they look great.. Cooked enough to have that stringy texture but firm enough to have bite.. What gives them that glaze? I'm going to pull my next low and slow at 178º and try to spend a lot of time in the conversion zone... PS Would you please repost those shots in the Cooking photos area. Can't have too much of a good thing.

target meat temp.. If your pieces of charcoal are all touching each other, you will have no problems with maintaining your target temperature with a Komodo. What I really like is the alarm that tells you when you've hit your target meat temp.. Unless you are camping next to your cooker.. it's too easy to overshoot your target.
