    Looking great. May i add that eight hours for baby back is they might be ready way to early, unless that your plan.

    I have 2 x 23" KK's and if I had to do it again I would go with the 23" and 32" combo. The 32" gives you that extra space for direct cooking.

    That touch of smokiness to the nachos must put them over the top.

    Ribs make for an excellent first cook. I always place bigger charcoal pieces at the bottom of the basket and and work my way to the smaller pieces on top around the outside of the basket.

    Simple dinner of baby backs tonight. I used some pecan wood chunks for smoke.

    I think you should get what works best for your particular situation. Whats good for me have not be good for you.
