hmmmmmm meat candy! Charles, I agree...the ability of the KK to hold temps is unreal! I woke up from my sleep and couldnt believe it held so well for so long, but I do understand why people like controllers.

Honestly this was my first attempt at brisket, let alone burnt ends. I kept it real simple, just smoked it for about 8 hours and wrapped in butcher paper for the last 2 1/2. KK's are great with moisture so as long as you have the patience to cook until probe tender, you really can't go wrong. Although, I am curious to see how Raichlans brisket comes out, so please post when you cook!

I did my first brisket point last weekend! Overnighter and the KK held solid at 250F with no gadgets! I wasnt sure how it would turn out, but I was very happy with its performance and of course the burnt ends

Thanks Tony. Yes, I have the DP Pineapple head and love it on grilled fruit as well! I also agree with you, this was about presentation, certainly lots of ways to execute the flavour profile, but this was fun.

Thank you @Shuley & @Aussie Ora The pineapple kept the chicken moist and gave a sweetness and subtle pineapple flavour. I did add some grilled pineapple to the rice, but next time I would add more, or like the book suggested, serve the chicken with a pineapple salsa.

Hiya friends! I haven't posted for a while but that doesn't mean I haven't been cooking! Today I was trying a recipe from Diva Q's new book and it was seriously good! Pineapple stand chicken served with fried rice. The chicken was moist and tasty with a hint of sweetness, really good combo of flavours. The book.. Step 1...turn the pineapple into a stand... Step 2..Season chicken and place on stand. I figured since I was using pineapple, something with an asian theme would be great. The family with happy with this decision Step 3..Cook chicken around 300F until done. Mine looked a little drunk and leaning, but it held up! Step 4...serve and enjoy! PS - the rest of the pineapple was grilled and served with ice-cream.....if you know my kids (and me), you'll understand how there are no pics of that!!! Thanks for looking Rak
