Well 2 hours in took them offtook the lamb shanks outmixed up a bit of corn flour with the sauce and thickened it up and put the shanks back in to simmerand plated with spring onion chick pea mashed potatoe drizzled with some sauce tate bloody awesome the plum jam takes this to another level Outback Kamado Bar and Grill

One hour in just gave them a stir and bastegive them another hour and they will be ready going to take the shanks out and cook the sauce a bit more to thicken up then serve with mashed potatoe with chick peas and spring onion mixed in and drizzled with the sauce can't wait lol Outback Kamado Bar and Grill

You would not believe it it's been raining and cold all day down here need a winter meal lol I mixed up some sumac,cumin and flourgave the shanks a light coating of oilput my dutch oven on the stove with some oil dipped the shanks in the flour mixture and gave them a quick braise took them out and added some spring and normal onion gave them a quick cookI then added some chicken stock and red wine with some rosemary, thyme and Tasmanian pepper saltthen some plum jam gave it a good stirand put the shanks inlet it come to the boil and simmer for ten minutesand on it goes at a temp of 315 stay tuned lol Outback Kamado Bar and Grill

Everything blended well love Jacks idea of the muffin pan at 375 to 400 with the holes is perfect without the holes at 250 is pretty good and tell skreef thanks for that jam I put on my trip tip the other day I thought Dee ate it all it worked out great as a binder for the ipa Outback Kamado Bar and Grill

I went way out on a limb tonight I love experimenting and everything is open game for me Dee got some meatballs from the shop and I decided that they need to be smoked I gave them so evvo and some of this ages ago jackjumper on the guru a really great cook and a top bloke posted smoking meatballs in a muffin pan with holes in the bottom to let them drain made one of those but only a six pan I had 10 meatballs tonight so I thought I would try them out in a normal pan without holesisn't Ora up at 250 with some cherry and apple wood chunks I was in no rush on they goan hour later smelling awesome and looking goodI chopped up some onion and decided to try the new sauce I bought the other day got it goingand added the meatballsgave them a stirand threw in some angel hair pastaand platedthe cherry rub mixed with the smoke took the meatballs to another level combined with the hickory maple sauce it turned out teriffc.   13. After nearly 3 years of kamado cooking I have never done a brisket but the amount of advice and different ways has had me thinking it's time to do one Outback Kamado Bar and Grill
  14. I got one when they first came out about 5 years ago down here have got a new one and gave my old one to a mate they use it just for chips but I've done lamb chops in it and turned out great banana fritters are cool too Outback Kamado Bar and Grill
  15. Just melt the duck fat in the microwave let it cool and coat the chips the same way you would using oil they turn out so crispy air fryers are awesome Outback Kamado Bar and Grill

Got myself another one and tried it with dizzy pigs ipa it was a bit hot for me last time so I found some stuff skreef sent Dee and used that as the binder to help hold of the heat and did it blend well on they go at 250and ready for a searit was not the biggest tip so went over temp a bit but sure did taste goodserved with duck fat airfryer chips and salad Outback Kamado Bar and Grill

Hey Mac I bought this house years ago and let it out as a rental the tenants over the years turned out to be not to caring the last lot I had to take to court to get rid of them decided I would move in and slowly do it up your not far from wrong about the ceiling lol some days I think about running away Outback Kamado Bar and Grill
