Hey grill is great .trim your brisket and cut the seem of fat from the point to the flat that way you have a reference point and will be easier to cut away from the flat .I've found the seem runs different on the point and flat make a couple of knife marks on the point to help you latter and cut a corner on the flat so you know what angle to cut against the grain .if you can get hold of some butcher paper .for resting or wrapping that would be good .i done a small brisket the other day followed by burnt ends .easy to do whilst your brisket is resting Outback kamado Bar and Grill

Really happy with the flavours with this ,accents of the lemon myrtle ,pepper berry the uncle dougies marinade injected into the breast the apple rub . But the brioche bread crumb mix with the pineapple head was amazing .ready to go....This chook needs a chiropractor lol..carved it up yum best chicken you will ever have is on a KK..and plated with the marinated vegetables. Hey Tan this was 3 kilos I just went straight .I did not have to spritz but I enjoyed it lol for the rest I just wrapped it in baking paper and foil .butchers paper is the go Raymond has not had any in yonks .I.knowtroy has it but it's finding the time .butchers paper is great for resting everything ,wrapping everything it breaths Outback kamado Bar and Grill

Was going to do a rotisserie like pequod did but things got the better of me plus I had no tie to truss any way. I started by using one of the grill mates veggie marinades ckreef sent me chopped up nice selection of veggies .then made some home made brioche bread crumbs using some leftover buns mixed it with some dizzy pig pineapple head and butter to put under the skin.gave the bottom some lemon myrtle pepper berry rub . injected the chook with uncle dougies sprinkled with some apple rub on it goes .with a bit of apple added at the end..

So I took the brisket out of the bag and gave it some more rub .put it on at 250f over cherry .looking good so far might give it a spritz I'm going straight.

No worries lol .instead of using the rib rack I don't know how many it holds you could roll your ribs up and use sewers to hold them in place .I recon you could get at least 9 on the main grate .going by tony's suggestion on using sewers for the trip tip .I would just get hold of some metal sewers and tac weld them to a metal plate.if you don't have a welder any pre fab shop would do it for bugger all that way .they will stand easy and you have another gadget to use say for corn or what ever .disclaimer if you start production of this design and make heaps I want one lol.

Raymond supplies the BBQ comp scene along with troy .so we are lucky to get cuts that I once dreamed of Perth is starting to get into the groove .you picked a perfect time to get into the low n slow .fruit wood was non existent a few years back .and tri tips were never heard of lol. I done it hard searching raiding orchards in the night lol
