Got a brisket gave it a trim added some pepper berry and some local rub vacuumed sealed it ready to cook tomorrow

Got some beef cheeks gave them some pepper berry carnivore black and some swamp venom the same as the ribs I done great combo .cooked up some bacon and pineapple on the griddle yum

What temp you running ,curious I've done vegetables under road kill up top .this looks the go I just thought it would get to hot -
Can't wait for tapa talk to start working again lol. Gave them some pepper berry on the bottom some pepper berry ,hard core carnivore black and some swamp venom on top served with wagu fat air fried chips and some veg I let these go to fall off the bone .

Congrats mate .sounds like your kitchen is full that's 3/4 of the game there .the occys are something I'm looking to get one day lol but for starters rotrie rod ,pizza stone .griddle check out your local camping store I got a nice round one for a fire pit that fits great.Thermo pen is very useful after you have cooked enough you will wonder why you bought the stocker

Dodgy scales are the worst .to me pizza is like takeaway I want pizza tonight . That's why my recipes are simple and taste so much better than takeaway.never got into the lets prep the dough six months before dinner thing lol.but I want to try the soth side .maybe I'm to slack lol

I have the basket with 8in reducer awesome for holding things together .I was luck to get the first straight rod from Dennis and love it .I have a basket for it that's great for wings. thighs and all those fiddly cooks.at the end of the day rotisserie is a fun way to cook

It's pretty basic 3c of 00 flour 2 tsp yeast 1/2 Tbs of oil 1/4 tsp of salt 1 1/4c of Luke warm water. Mix it all together and let rise.good for two pizzas

Got myself a small chunck of beef .got it 165 then foiled with some beef stock and chocolate cherry stout .then let it go to 205f and pulled

You in Perth mate nice spot .let's get a few things straight you don't need the flaming torch from hell for your KK you can bring this puppy up to 500 for ages before it even looks close to being heat soaked.think forward sear .I fill my basket add a couple of samba fire lighters from bunnings vents all open ark it up to 350 ,400 lift lid throw on wood.add foil as a deflector the temp drops and just adjust my settings it's that easy I'm ready to low n slow 250f set in half an hour.
