  1. Kraft papers are wet strength papers, check out the link and decide for yourself if you want the chemicals that go into making it in your food. Personally, I'm not a big fan of urea or formaldehyde. YMMV.
  2. Our fig tree has pretty much taken over the near back yard despite having been cut back to the roots a couple of times. But it seems like the birds beat us to it every year, it's rare to get a fig that hasn't had a hole pecked in it. Last year it contracted some kind of fungus and had to be pruned back heavily but it's still relatively massive, I'll take some pics and post them soon. Nice pics! Best, Bill
  3. OK, maybe a little OT but I don't think anyone could argue that Formula One cars don't get hot and cook their tires and brakes. Did anyone catch the Singapore race today? @DennisLinkletterdid you hop a quick flight over? If not, you missed it, great race! I've been an F1 fan for years, I finally got my chance in 2014 to go to Austin for the race. It was great, I've been there and done that now and have a $50 ball cap to prove it. It was an experience I've waited a long time for. That said, I'll pass on the lines, the waiting for the shuttle bus from the offsite parking, the crowds, the walking miles in the heat of the day and the overpriced foods. I can see more of the race from my La-Z-Boy on the DVR and I can skip the commercials. And save a lot of money in the process. Nevertheless, I have no regrets. It was a bucket-list trip and I'm glad I made it. I just have no desire to do it again. Any other F1 fans out there? Best, Bill
  4. @ckreef, it was certainly not my intention to insult anyone and I sincerely apologize if I did. My point in this thread was that anyone who owns a KK cooker has already spent a substantial amount of funds on the best charcoal cooker on the planet and a lot of time learning how to make it work. We've all made a substantial investment in our interest in cooking so why wouldn't we be equally interested in continuing on to the next step of developing our own unique flavor profiles? It's just another step on the path to barbecue enlightenment. And it's so easy to do with the resources of the Internet at our fingertips. Find a recipe for a rub you think you'd like, try it, fiddle with it, make it your own. I'll venture to say you'll be more satisfied with the results than with something you bought.   5. So how does one upload an avatar photo? And what are the size limits? I haven't seen anything in the stickies, and I can't find anything in Profile or User Settings. Apologies if I'm missing something that's obvious to the most oblivious observer but I just can't seem to figure this out. TIA, Bill
  6. So I replied in a post about Lane's Kickstarter campaign, they're promising to send you 12 bottles of rub and a T-shirt if you pledge $154. Now they're mostly funded so I'd assume there's not much risk but think about what you're buying into. They don't state how big the bottles are, first of all. I went to the Lane's website and their store, it looks like the bottles they're picturing on Kickstarter are 4 oz. or so, same as on their site. So that's 12x4=48oz. for $154, that's $3.21/oz.. That's awful expensive for rubs that consist primarily of kosher salt, brown sugar and black pepper. For $50 you could go to WalMart and leave with enough ingredients to make 20 lb. of anything they offer. Click over to Amazing Ribs and you'll find all the rub recipes you could ever want. Play around, make a few of them your own. You'll be glad you did. Honestly, I don't have any axe to grind with Lane's or any other boutique manufacturer, they're just a small business trying to make a profit. What they sell is typical of the industry: Take a lot of cheap ingredients, toss in a small amount of more expensive ingredients, put it in a plastic bottle that probably costs more than what's in it, slap on a label and sell it for all the market will bear. Look what McCormick has done with Montreal Steak or their Grill Mates, same thing just on a larger scale. If you're here you deserve better. And you can do better, it isn't hard or expensive. You bought the most expensive ceramic cooker in the world because you have a serious interest in outdoor cooking and you appreciate the best. Why throw overpriced salt and sugar on what you're cooking? Take a little time, learn what a rub is, buy some inexpensive raw materials and try a few recipes. I guarantee you'll be happier with what you come up with than something off a shelf or Amazon. OK, soapbox is stowed. Apologies for the rant. But some things just hit a nerve. Best, Bill
  7. So for $154 you might get 12 bottles of rub that are mostly salt and/or sugar. Oh, and they'll throw in a T-shirt. That's some awful expensive salt and sugar IMO. I stumbled across the Amazing Ribs site over a year ago when I got interested in learning how to smoke. Meathead has some really great recipes for rubs, the recipes are free and if you spend $30-40 at the local grocery store you can have all the ingredients to make 20 pounds or so of assorted rubs. So ask yourself "How long will 20 lb. of rub last me?" Then think about how long 12 8-oz bottles will last. You pays your money and takes your choice.
  8. Thanks for the pics, that is a beautiful cooker. Is that the Autumn Gold? I'm not getting mine until early October, I ordered the 22 Hi-Cap in Autumn Nebula/Metallic Bronze tweed. For accessories I got the double-bottom drip pan, the basket splitter, the cover and the grate grabbers. I'm going to add some charcoal but Dennis said the coffee lump would be in before my grill shipped so I'm waiting for that. Congrats! Bill
  9. Don't wet brine! Just do as @5698k advised and you'll do fine. You can dry brine overnight or use your rub if it has salt in it.   11. I think you should just do away with it. I've been tramping around internet forums for 16 years and I've never seen one where a user could delete or hide a reply(much less a whole thread) without asking a mod. Usually the best you can do if you put your foot in your mouth is edit the post and delete everything. If you can tweak it to hide only your reply that would be OK but being able to effectively delete the whole topic means you're giving the initiator the power to hide all the responses from others who participated. I don't think that's really a good thing. Essentially, you're promoting anyone who starts a thread to moderator status for that thread. And I doubt members who put time and effort into responding to that thread would appreciate their labors disappearing just because the OP decided he didn't like what he'd started. That's, for me, what forums are all about. Everyone gets their chance to speak their mind and, if they're not obnoxious about it, their thoughts will be there forever. Others can search and see what was said years after the thread has died a natural death. Giving any random user the power to obliterate the work of others is, to me, contrary to the spirit of a forum. Damn, I got wound up, didn't I? Apologies, I don't usually haul out the soapbox this early in the evening. I guess it's just being a Yank and the "Freedom of Speech" thing. Anyway, you asked...   12. @churchi, logged out, closed the browser(firefox is set to clear cache , history and cookies when closed) and the "Mod Actions" button is still here but it shows "Hide" instead of "Delete" when you click on it. The question is: Does that mean I can hide my reply or the whole thread? I'm afraid to try....

  15. Here's a screen cap, look right below the "Submit Reply" button, there's the "Moderation Actions" drop-down, if you click on it you get only the "Delete" option. Surely this shouldn't even appear on the page viewed by an ordinary user?
  16. I was adding a reply to my intro thread and got a pic attached that I didn't want and couldn't figure out how to remove it. So I closed the page, signed out and signed back in. Went to the Reply box and there was my reply, pic and all. So I saw the "Moderator action" button, clicked on it and saw "Delete" which I thought would delete my reply. WRONG! Now the whole thread is gone! Is there a moderator out there who can undelete it? Thanks, Bill
