Everything looks great and I think HalfSmoke is the one who can say for sure about using cornmeal but I think I saw recipe that included cornmeal in the crust for more texture! Garvin

INGREDIENTS Banana Bread Layer 4 bananas (as ripe as possible) 4 tablespoon vegetable oil 1 egg ½ cup sugar 1 teaspoon vanilla extract 1½ cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda ¼ teaspoon salt 1 teaspoon cinnamon Cheesecake Layer 32 ounces cream cheese, softened ½ cup sugar 1 tablespoon vanilla extract 1 cup milk 1 tablespoon gelatin powder Caramel, for drizzling PREPARATION Preheat the oven to 350°F/180°C. In a large bowl, mash the bananas with a fork. Add in the oil, egg, vanilla, and sugar. Stir until combined. Add in the flour, baking powder, baking soda, salt, and cinnamon. Stir until just combined. Don’t over mix. Pour the banana bread batter into a greased springform pan and bake for 30-40 minutes or until the top is set. In a large bowl, add the softened cream cheese, sugar, and vanilla. Whisk until combined. Microwave the milk until hot for about 2 minutes, and add in the gelatin powder. Quickly stir until gelatin is dissolved, about 5 minutes. Pour the gelatin mixture over the cream cheese and whisk again until smooth. Pour the cheesecake mixture over the baked banana bread and cool for 3 hours or overnight. Drizzle with caramel and enjoy! Garvin

FRIED MAC ‘N’ CHEESE STICKS Makes: 30 sticks INGREDIENTS 8 ounces elbow pasta 4 tablespoons butter 4 tablespoons flour 2 cups milk 1 teaspoon salt ½ teaspoon pepper 2 cups sharp cheddar cheese, shredded 2 cups flour 4 eggs 2 cups bread crumbs PREPARATION 1. Bring 3 quarts of water to a boil and cook elbow pasta. Stir occasionally for 7 minutes, or until al dente. 2. In a saucepan over medium-low heat, melt butter completely and whisk in flour for 2 minutes to create a light roux. 3. Add milk to the roux and season it with salt and pepper. Stir continuously until the sauce fully thickens. 4. Gradually add cheese to your sauce and stir until fully combined. 5. Add cooked pasta to your cheese sauce and stir until each noodle is fully coated. 6. Remove mac ‘n’ cheese off the heat and pour onto a parchment-lined baking sheet. Spread evenly and freeze for 2 hours in the freezer. 7. Cut the frozen mac ‘n’ cheese into sticks. (Cut in half then cut again so that you have 3 to 4 inch sticks) 8. Batter sticks in flour, egg, and bread crumbs. In that order 9. Preheat a pot of oil to 325°F/170°C. 10. Fry for 2-3 minutes or until golden brown, then drain on a paper towel. 11. Enjoy! INGREDIENTS 2 tablespoons coarsely ground black pepper 2 teaspoons kosher salt 1 14-ounce New York strip steak (or other steak of good quality) 1 tablespoon vegetable oil 2 tablespoons butter 1 cup cream ⅓ cup brandy or cognac 1 tablespoon dijon mustard PREPARATION Liberally season steak with salt and coarsely ground black pepper, being sure to generously coat the entire surface of the meat. Using your hands, press the seasoning into the meat create an even coating. Heat vegetable oil and 1 tablespoon of butter in a large skillet over medium-high heat until just smoking. Add the steak to the pan and sear on one side for 4 minutes. Turn and sear the other side for another 4 minutes, for medium-rare. If steak has a fat-cap, be sure to sear it as well for 30 seconds to a minute. Once cooked to desired doneness, transfer steak to a cutting board to rest. Reduce heat to medium and add brandy. Allow brandy to cook down for about 1 minute while using a whisk to scrape off any browned bits leftover in the bottom of the pan. Once brandy has reduced by half, add cream and continue to whisk until combined. Add dijon mustard and butter and continue to cook until mixture begins to reduce and thicken, about 5-7 minutes. The final pan sauce should have a rich consistency and coat the back of a spoon. Reduce heat to low and reserve. Once rested, slice steak into ½-inch pieces. Pour cream sauce over the top and serve. Shrimp Cups With Chunky Avocado Salsa Serves 12- Makes 24 cups INGREDIENTS Cups 6 flour tortillas 2 tablespoons butter, melted Shrimp 1 pound (450 grams) shrimp (Bag and a half of 16/20) ½ teaspoon salt ½ teaspoon pepper 1 teaspoon cumin 1 teaspoon paprika ½ teaspoon chili powder ¼ teaspoon cayenne pepper 2 cloves garlic, minced 1 tablespoon lime juice Avocado Salsa 2 avocados, diced 1 large tomato, diced 1 medium red onion, diced ¼ cup jalapeno, diced ¼ cup cilantro, chopped ½ teaspoon salt ½ teaspoon pepper Sour cream, to garnish PREPARATION 1. Preheat oven to 375˚F/190˚C. 2. Butter each side of the tortillas and cut into even quarters, making 24 pieces. 3. Place one piece in each cup of a muffin tin and push down so it creates a cup shape. (Make 2 batches or use 2 muffin tins to make the full amount of cups). 4. Bake for 10-12 minutes or until crisp. 5. In a bowl, mix together shrimp, salt, pepper, cumin, paprika, chili powder, cayenne, garlic, and lime juice. 6. Cook over medium high heat for 8 minutes, flipping halfway. Set aside. 7. In another bowl, combine diced avocado, tomato, red onion, jalapeno, cilantro, salt, lime juice, and pepper. Stir gently. 8. Assemble the cups by placing a spoonful of the avocado salsa in the toasted cup. Place a piece of shrimp on top, followed by a dollop of sour cream. 9. Serve with lime wedges. 10. Enjoy! Brazilian Chicken Croquettes (Coxinha) Serves 9 - 12 INGREDIENTS Filling 1 tablespoon olive oil 4 cloves garlic, minced 1 onion, diced 2 cups cooked shredded chicken ½ teaspoon paprika Salt to taste 4 ounces cream cheese 3 tablespoons fresh parsley, chopped Dough 1 tablespoon unsalted butter 2 cups whole milk ¼ cup chicken broth 2 cups all-purpose flour Eggs 2 cups panko bread crumbs Oil for frying PREPARATION 1. In a medium pot, heat olive oil, then sauté garlic and onions until soft and brown. Add shredded chicken, salt, and paprika. Stir to incorporate. 2. Transfer mixture into a bowl, add cream cheese and parsley. Mix well. 3. In the same pot, add butter, chicken broth, and milk. Bring to a boil. Stir in flour until dough is formed. 4. Transfer dough to a flat surface. Knead the dough while it is warm, but not hot. 5. Pinch a piece of dough, about the size of a large egg, and roll into a ball. Using your hands, flatten the dough and spoon filling into the center. Wrap the dough into a pear shape and make sure there aren’t any holes. 6. While heating a pot of oil to 350˚F/180˚C, dredge the dough in egg and panko, then deep-fry till golden brown and cooked through. Drain on a towel and serve immediately. 7. Enjoy! Garvin
