Well I used pepper jack and a little monterey jack (not good melters) but here's some tips that will help. http://www.finecooking.com/article/the-science-of-melting-cheese Grate them, room temp...added white wine and corn starch. I used a simple injecting needle for the injecting. -

I experimented with cheese injected pork loin and loved it. This time I used pepper jack and it wasn't as cheesy as when I used cheese melt. Cheese melt and pork are like peanut butter and jelly. You gotta try it! -
Pork chop on stick is good but when you inject cheese into the mix then....well!

Wow very surprised since that motor is rated for 50lbs "perfectly balanced" but can handle 20 lbs unbalanced. That couldn't have been more than 3-4 pounds of food and it wasn't far out of balance. Tony even if I know I'm out of balance I still rarely use my counter balance. That motor has a 1 year warranty, I wonder if something is amiss ? ThanksGiving we did two 16 lb birds and the same motor wasn't even breathing hard.

If I were to spin corn I'd probably try just popping an hear on the two outer or inner tines. One on each end if doing even # of ears. The CSR's on mine I reversed the claws so if it was bigger it'd go on 3 tines or 2 if smaller. Flipping the claws in really works good for certain cooks. It'll definitely give you some more versatility.

Definitely use high heat loctite on that! So what motor are you using anyway? Most often I use a 50lb rated and with that it doesn't even care if something is off balance.

Sometimes it's just dry rub but other times I'll take what I used for the dry rub and mix up some apple cider vinegar, catsup, brown sugar and some worcestershire ... and maybe some cayenne for a mop type sauce/glaze.

Don't think it could have gotten much better and the roadside is a nice change for a whole bird. The spatchcock cooked very evenly too.- 11 replies

Thanks ...and pineapple will never be the same for me. This is from now on my go2 way. Heat it through, spray with some evoo and cook on the cinnamon sugar. Sooooooo good!!!- 11 replies

Roadside marinade, spatchcock and rotisserie for the "Tri-Fecta Chicken" The pineapple part way through i brushed on evoo and sprinkled with cinnamon and sugar. Reversed the claws inward on this cook. Oh only took 1 pair of OctoForks and there's space to rotisserie lots more...kinda nice!

Yea I just saw that. It looks like anodized aluminum. I wouldn't mind trying those out on the stick burner I use. I hear they deliver a pretty good sear

I think it might have been you that mentioned the PBW. I'd love to know how it works. Since I use mine so much and have to keep them looking like new I use a ultrasonic cleaner from HF and drop in a dishwasher tablet. Even when they're amazingly baked on a soak in that cleaner they come shiny clean. It could largely be due to the dishwasher tablet. Just soaking in that stuff cleans like nobody's business.

Hard to clean? What about with that scraper shown in the picture and putting in a dishwasher? BTW are they stainless?

Yes Tony the flat works great with the 5/16" rod. It didn't used too but now is excellent thanks to a fix they did. I was the lucky recipient of testing out the new flat basket fix and gotta say it rocks. -
All I know is I want to make some home made potato salad. What goes with that I have no idea!
