Also you don't need to cook these lean roasts to 190. That's a good finish temp for a brisket or pork butt, but WAY over does a roast. 125 to 145 can work all right.

You cannot do a traditional low and slow cook for a round roast, a center cut chuck roast and several others. These very lean cuts, which are not naturally tender, are almost pure muscle with very little intra-muscular fat and inter-muscular connective tissue. They come out like shoe leather if cooked low and slow in air. At least un-foiled. Only certain cuts do well with a low and slow. Consider that a brisket is generally cooked low and slow. Yet the flat, which is also very lean, can come out dry at the end of a low and slow. That's why some people don't like doing briskets; the point, which is well marbled, comes out fine, the flat might not. You can get good results with the lean cuts with a variation of the low and slow. Do a stew in a cast iron dutch oven with some liquid that has a little acidity, like tomato. The prolonged cook in liquid with a little acidity can really tenderize these lean muscular cuts. Perhaps a foiled cook, I have not yet tried that. Somewhere I posted a recipe I got off the Primo forums for Italian Pork Stew. You can use it for pork or lean beef like round roasts and so on.

try this Last night I cooked a chicken on roti, it was fabulous! Direct cook on Royal Oak with a bit of pecan for smoke, about 350 for two hours. We put garlic, salt, and pepper under the skin. As good as any chicken I have ever eaten. I'm guessing any roti chicken technique you find on these forums might work for a duck, try it.

Fetz, I was replying to Cook about stopping quickly, and then rambled on from there. Yes, I understand your point about what the mind is doing. As an instrument rated pilot, it is hard for me to accept that people can't drive and talk on the phone at the same time. The level of multi-tasking we have to do while flying on instruments is far more intense and demanding. However, I will take your point since 99.9% of the population who drive are not up to the task of instrument flying. My wife is always saying I am too critical and demanding of people and expect them to pursue excellence and perfection like I do. It's pretty disheartening to think people can't drive and talk on the phone at the same time. Or exercise personal responsibility. -

clarity You bring your car to a stop with your foot, not your hand. However, if you think stopping with a cell phone in your hand is impaired, how about any other object in the known universe in your hand? Coke, pipe, cigar, cigarette, tissue, lipstick, pen, pencil, paper towel, map, iPod, snuff can, hamburger, chicken leg, eye drops.... I'll say it again. Outlaw EVERYTHING in the car that might distract you, or nothing. Not just the cell phone. Let's apply a little intellectual rigor, and consistency, to this discussion. As for that study, I want to see the citation. Have you ever heard that second hand smoke causes cancer? You hear it often enough, but it is a bald faced lie. The biggest study ever done on this actually found a PROTECTIVE effect from exposure to second hand smoke; you are LESS likely to get lung cancer. This study was carried out by a politically driven group with an agenda, not pure scientists. They hated their results, and sought to hide them. That would be the World Health Organization. This is tangential to the discussion but I only bring it up to make the point that "studies" are not always sacrosanct. Like the falsification of the science on the global warming hoax. The study mentioned on cell phone use may in fact be dead on accurate. It also might be total hogwash. But I would like to see the same study done on every other possible hand held item. -
OK OK, that's different than how I do it. I just use the "Add image to post" command. That opens iPhoto and then I click on the image I want. It loads it as a thumbnail. Which is OK I guess.

let's see the evidence Actually, I have no idea that it works. And I'm pretty sure the bureaucrats in any Dept. of Transportation where there is such a law have not designed an accurate study to determine a proper endpoint and a way to study it. However, if it DOES work then we need to outlaw EVERY other activity in the car that is distracting and dangerous, if we are to be consistent. I maintain this is nothing more than some busybodies wanting to feel good about themselves while shoving ever more government intrusion in to our lives. As for myself, I will continue to use my cell phone in my car in a way that is safe. We have a new law in Texas that prohibits cell phone use in an active school zone. I'm pretty sure hundreds of Texas kids were NOT being mown down by cell phone drivers before, but we got the law nonetheless. I can imagine a driver on the cell phone suddenly finds him or herself in a school zone and THAT flusters and distracts them as they try to hurry up and end the call while not being rude. -

BS I think it's a crock of sh.t. Why single out cell phone usage when there are a hundred other things you can do in the car that are equally distracting? Ever changed your pants in the car while driving? Or salted, peppered and ketchuped your burger? Or fumbled for a box of Kleenex on the back floorboard? Driven with a dog loose in the car, or on your lap? Mopped up a coffee or soft drink spill ? Steadied something on the passenger seat so it didn't tip over? I have done all those things and a hundred other odd things in the car, and so have all of you. The simple fact is you have a responsibility to drive safely anytime you do ANYTHING in the car that is not specifically driving. We can't outlaw every conceivable act that might cause you to be distracted. Prohibiting cell phone use is like gun control, the nanny state trying to control every aspect of your life, some politician trying to make you think he actually "cares". There is something called personal responsibility that seems to be overlooked in our society. So when you drive your car, anywhere, anytime, be careful!!!! I know damn good and well you will be doing SOMETHING in your car that is not driving, even if it's not cell phone use. -

total thermal energy delivery The fire is going to be small and short lived for Susan's purposes. Also, you will notice in the photo that the wok is not tight up against the walls of the KK. It is suspended in mid air in mid KK. Also, the wok has a limited charcoal capacity. The total heat energy this rig can deliver to the KK walls is a good bit less than a raging charcoal basket down in the fire box. I doubt there is any problem at all with this, but, for those who don't want to, don't do it. I do it.

Susan, you can easily use your KK as you wish. Get a grilling wok. Start your fire in a charcoal chimney, dump it out into the wok which you have placed on the charcoal basket handles of your KK. Put the mid level grill on the KK and cook on that. You now have a small amount of hot charcoal close to your grill for quick hot cooks and no need to heat soak your huge KK. You have not added one more thing to your porch. One reason you might want an extra grill, however, is for parties. I couldn't get the second photo to upload, but you get the idea.

We decided to try a MAC knife so I got the 8" MTH-80 chef's knife to try out. It's beautiful, feels great and cuts like a dream. If you can spend over three grand on a KK, $120. for an awesome chef's knife isn't bad. Should last for a lifetime with proper care, just like the KK. I think I'll try a Global slicing knife next to see how they are, probably the G-3. For slicing briskets, roasts and so on. What are your favorite knives?

My KK is so thick with tar you wouldn't believe it, and it sticks my damper shut every cook. I don't even use a gasket up there anymore. One time I started a creosote or tar fire by flaming the inside of my damper top with a Mapp torch to try to free it up. It took a lot of direct Mapp flame to do that, I don't think the normal cooking would ever set the tar on fire in a KK.
