Cooked 250 dome for 5 hours till done...no foiling no muss or fuss... sauce on the side at the table Happy Independence Day everyone!

    Re: Tower of Steak That pic was me cutting up a couple of fresh, never frozen strip primals. Grass fed. We vacuum seal them in family size packs. Keep some fresh for a week or so in the fridge and freeze the rest.... n67481

  15. 7 pound bone-in butt 210 for 10 hrs and 225 for 3 hours to 185 internal with a sugar free rub legs of lamb 225 Guru about 3 hours to 155 internal salt pepper and minced garlic Almost forgot to take pics....

  19. Re: Where is the smoke ? I typically don't heat soak with my grates in for a low and slow....just the heat deflector. Then it is relatively easy to tip it up to strategically place the wood chunks. The mass of the metal grates gets up to temp relatively quickly.

  24. Re: Just learning about our new KK It is stuck at 170. The Heat Deflector is in there as well. It could take a good 1-2 hours depending on how little charcoal was lit and the ambient temperature.
