You can actually cook low and slow without ever doing a break in.....I wouldnt hesitate to get an elcheapo and go for it....

nice spider....and ribs.... Mine were super simple. Salt pepper onion powder and paprika. On coffee wood from 150 degrees till stable at 250.... Cooked 250 dome for 5 hours till done...no foiling no muss or fuss... sauce on the side at the table Happy Independence Day everyone!
Re: Tower of Steak That pic was me cutting up a couple of fresh, never frozen strip primals. Grass fed. We vacuum seal them in family size packs. Keep some fresh for a week or so in the fridge and freeze the rest....

I typically don't heat soak with my grates in for a low and slow....just the heat deflector. Then it is relatively easy to tip it up to strategically place the wood chunks. The mass of the metal grates gets up to temp relatively quickly.

It is stuck at 170. The Heat Deflector is in there as well.
It could take a good 1-2 hours depending on how little charcoal was lit and the ambient temperature.
