Flat Iron Steaks

Mmm, sure wish I had been cooking these instead of ribeyes years ago. Man, that was one delicious cut of beef. Very intense beef flavor, which is also why I love skirt steak too.

Also been using a new steak season that is fantastic. Have used there white/black pepper and salt for years. They also have a killer olive oil dipping spice too. http://www.c-els.com/sfCatalog.asp?sn=E ... chid=63590

FYI, the pic does it no justice. Was cooked to medium, but this pics looks more med-well.

I never heard of a Flat Iron Steak before. What cut is it? Almost looks like skirt steak I use for fajitas/burritos.

Used to be a cheap cut of meat, not highly sought, but have watched it increase more and more popular/expensive.

Looks great.

If truth be known the best beef flavor is probably in chuck.

It is much thicker than skirt steak, but almost as tender. The grain structure is up and down verses the side to side on skirt steak too. But a very nice steak indeed.

It has been popular here in Calif for a few years. Black Angus used to feature it on their menu for $8 or $9 and it was a steal. Then the cut started getting popular and they removed it from the menu. :evil:

My first time with it was a very memorable meal. It was cooked to perfection and served sliced around a mound of black truffle risotto. It was a Sat nite special at a local restaurant, and I have seen never that restaurant feature it again. :(

When I purchased it at a local grocery store, I did not care for their version of the cut. They cut it too thin and small.

Have been cooking them for a couple of years. They are VERY GOOD. On sale last for $4.99/lb. Took 3 home to go with the ones in the freezer. Price keep going up a couple of weeks ago they were priced $6.99.

I partaked my first one while visiting CA in Feb this year. Had never heard of pork tri tip before, but was sure good, even on a metal grill.

Would have been even better in a ceramic cooker, no doubt !!!

Nicely done. I've never had a Flat Iron Steak before, but that picture is making me want to try one now. When I get my KK I'll have to visit my butcher and see if he can cut me some.
