aavkk:  Cigars, scotch and a KK tells me you like smoke :)   If you want to try something different and wonderful, tequila related, try to locate one (or more :)) of Del Maguey's single village mezcals.  Truly wonderful with a nice roasted agave pina essence.  The Tobala is wonderful.  The Chichicapa and Minero are very good relative values and make fantastic real margarita, as well as for sipping, floaters adding a unique smokiness and kick that you, if like me, just can't do without.

Cardamom from the standard store bought spices is about 80% LESS aromatic than the Cardamom I get from World Spice.

I get it whole and grind it myself.. stinks up the whole house.. So strong it makes you wonder if it will taste good..

NOTHING (except great meat of course) will easily improve your Q more than FRESH spices..

I have been lucky enough to locate a chuck roll and am planning to use the coffee cardamom rub.

 

My question is: 

Is there a minimum and maximum time frame for letting the meat marinate in the rub before I place it in the KK?

 

Any advice is greatly appreciated.
