I'm 1/2 Italian...grew up helping my Mom & Uncles hand crank meat grinders for all things Italian sausage. My Mom had 3-brothers and each of their Italian sausage "recipes" tasted different. I do make sausages but it has been a long time since I have made any. My last batch were chicken sausages which I did like and at the same time I made some 2 oz. patties for breakfast.
