tinyfish Posted April 24, 2016 Report Posted April 24, 2016 I bought a small brisket for Sundays dinner. I put the brisket on at 1am this morning. I wrapped it in butchers paper at 7am. At about 12pm I probed for tenderness and good thing I did because it's was ready. 1 Quote

tony b Posted April 25, 2016 Report Posted April 25, 2016 Great brisket! Love the butcher paper technique. It's been my go-to since reading Franklin's book. Quote
