Stuffed Chicken Breast

I had to get my challenge cook for April done so I banged it off yesterday. 

I did a chicken breast stuffed with sun dried tomatoes, mushrooms, spinach and garlic.  I sautéed the stuffing ingredients for a few minutes to get some of the liquid out of the mushrooms and to marry all the flavors together. 

I stuffed rolled and tied the chicken breasts together. 

I cooked them indirect at 350f on the main grate for about one and a half hours. I added a pan of roasted potatoes too.

Tony - I love this cook and I especially love the marketing shots of the cook on your KK!  Let's not forget that plated shot, either!  Wonderful cook my Friend!  Here's to many more cooks like this.  Kudos!

Well done, T! Planning a similar stuffing for a pork roast that will be the inaugural cook with the new (and finally working, we hope!) rotisserie basket! 

Great money shots for Dennis to post on Instagram and FB pages.

That type of stuffing would be great for pork.

Yes, I'll have a dinner guest, but I promise to take pics of the assembly (stuffing the pork roast) and the cooking, as it will be the inaugural cook with the basket.
