  3. OK not exactly smoking wood but thought this was the most appropriate forum. Decided to give this a try. Besides the Backyard Bistro needs its own house brand lump. Here is my charcoal retort. I still need to drill holes in the bottom of the 55 gallon and in the bottom of the stove pipe reducer. Will do a couple burns to clean up the barrels then lump here we come. Will this be easier? Nope. Will this be cheaper? I doubt it. Will this be as good or better? Maybe. Will I learn something and have fun playing with fire? Absolutely!!!

  4. Only someone who sous vides know how wonderful the juices from the bag taste. I made a wonderful fly by the seat of your pants soup with the leftover juices from the beef short rib cook. Snow peas, onions, mushrooms, carrots, celery and potatoes. It was so tasty.

  9. I’m not quite swamped, but pretty close. I’ve been using Smaug — just not enough time to do a writeup, or the cook was so basic (hotdogs, burgers) that I passed on documenting it, especially since I’ve posted on hotdogs and burgers already. Woodworking is coming along. My shoulder is still acting up a little, but I’ve been mentoring a local high school student who is building a small bookcase as part of a senior project. That’s fun, because that way I get to do woodworking while someone else does all the work.

  10. I bet, Mom's are like that! My Dad in his later years would get up before Mom and make his own breakfast. He'd brag about how he only needed a kettle of water on the stove to make breakfast - instant coffee and instant oatmeal. I'd just shake my head in bewilderment, as my Dad was actually a decent cook, when he wanted to!

  12. Rant: This is IMHO the biggest reason we can't buy real lard anymore. In relative terms real lard (not the shit in the plastic tubs in the mex aisle) is healthier than butter. But the same people that push lard aside glob butter on everything. Clueless. One of the many treats for me on my first trip to Italy last fall was enjoying lardo...splendido! Just got back from my first visit to North Carolina...and had my first taste of the local fare, shrimp and grits, at the Spouter Inn dinner house in Beaufort...splendido! It was one of those depressing dinners. Depressing because with each fork full I got closer to the end of some incredibly tasty fare!

  18. Awesome looking dessert! We'll have to share shrimp & grits recipes. I think mine is a pretty damned good one if I do say so myself. I'm from SC, so I'd better know how to make decent shrimp & grits or they'll take away my visiting privileges!

Hi CC thanks for the welcome on this forum to..thank you for all that bragging you doing on me..I have to say ckreef has taught me all the do's and donts on the grills.since I have been cooking on grill, I have all sorts of cooks I want to doIm looking forward to sharing those with everyone and def looking forward everyone elses
