Burley Hurley and the crew stop by at 3 PM today for the official moving ceremony. I'll be sous-vide'ing some prime strip steaks with Oakridge Carne Crosta (awesome stuff) in the background, then sear them on my 23 as payment. Chimichurri and salt n' vinegar taters on the side. Started the dough on Sun. and it looks good to me. I just took it our of the fridge. Divided and balled, resting for 2 hours. Pulled into 2 X 12 inch pizzas. Loaded, cheese on the bottom, mushrooms, peppers, salami, onions, sauce, fennel and anise seeds, more cheese and cherry tomatoes. Baked at 475F on the Baking Steel for 7 mins. Sliced. Someone broke my bubble. ;( The bottom crust.

Y'all need to rethink your opinion of D.C. Metro...for now at least. I used to be a regular metro rider for my daily commute, but the system has gradually broken down and become highly irregular. Started killing people when trains were breaking down in tunnels with fires and smoke. Years of neglect and patchwork repairs finally gave way to a crash (no pun intended) program to get things up to snuff. But it requires shutting down different sections of track and stations for weeks at a time. This started last year and will supposedly be complete this fall. Until then, planned and unplanned service disruptions have resulted in yuge decreases in ridership (I must now drive to my office in Arlington ). We're all crossing our fingers that all will be well AND safe AND reliable soon, but for now, plan on Uber if you come to D.C.

Sounds like you on top of it. Checked Naked Whiz's database - no review of the Lowe's brand. It's highly unlikely they make it and just get it branded for them, which means there's a good chance that it's Royal Oak in disguise!

Threw some St Louis cut pork ribs on the kk this afternoon. I had 3 slabs that came in a pack from Costco. My original plan was to cut them in half and try them on the octoforks but after I got them on it, there wasn't enough clearance between the meat and the grill basket. I regrouped and put them on the upper grate for an indirect cook. Have you ever decided to try a couple different rubs for a taste test and then when they were done and cut up, you couldn't remember which was which? Me neither. I picked up some silicone bands from amazon and color coded them for 3 different rubs. Slap yo daddy's regular rub, the hot version of their rub, and Dizzy pig's IPA. This is the IPA, I am waiting on family to join me for the rest but I know I like this one. Very tender and moist of course but the flavor is off the charts. I'll update after I try the others.
