I'd put the butter and seasonings under the skin and baking powder on the skin a few hours before cooking.

OK, thanks for the ramp photo. I only have a small step (slab) to get it into my metal building. It's around 6" so my ramp should do it without a problem. Looking forward to seeing some kind of animal cooking on your KK.

The biggest difference between the KK with cold smoker and the pellet grill is that you're not relying upon the pellets in the cold smoker to be the heat source in the KK. It's just to add smoke flavor. If you're doing a "hot smoke" then you have a fire going in the charcoal basket in the KK. If you're "cold smoking" then you don't want the heat anyway. Apples & Oranges in my book. YMMV

Especially on a windy day! You get "vacuum drag" across the top vent, which will pull excess air into the KK even when the fan is not running. I never have my Guru fan output damper more than 1/2 open.
