  2. I cooked Deep Pit Beef (adapted to the Kamado). You can read more about it here. There isn't much to look at, it's basically a beef roast sealed in foil and cooked low-n-slow for 12+ hours. It's popular (or was) at California fairs and rodeos. Rather than dig a 4 ft deep hole in my backyard, I used the KK. It's kind of like beef pot roast meets pulled pork. It's great by itself or on a bun. Would make for good tacos and enchiladas also. Seasoning is basically 50/50 prime rib rub and black pepper. It turned out well so I'll be doing it again soon. I'll make sure to take some pics and post in KK Cooking.

  3. We just took delivery on a 21 with autumn gold pebbles. We were looking at the 23 but this one became available out of the Las Vegas warehouse so we jumped on it. Looks like it will be just right for the two of us. We mostly need it for smoking, roasting and baking. Our typical cooks are brisket, ribs, pork belly, pork shoulder, pastrami, oysters, breads, pizzas, strombolis... (but I'll throw pretty much anything on the smoker) We've been using a small home built water smoker that requires a lot of temperature management. It was a real thrill doing the burn-in and seeing the KK sit for hours at a constant temperature on a fairly windy day. This is my first time seeing a KK in real life and wow, it's exactly like everyone says. Cheers, Eric & Sarah

  9. its been raining for weeks and finally got to cook on the kk… smoked bacon (was pancetta but i’m scared to eat it raw) 😅 smoked chicken and sausage. used a new battery powered air pump so now i’m running the kk smoker untethered from the outlet.

  10. I smoked 10 pounds of bacon on the KK recently but last night I smokes a few slices in the WFO. I'm looking forward to breakfast, truth be told I look forward to breakfast everyday.
