  1. Welcome sk. Looking forward to seeing your cooks on that beautiful piece of art that you guys just acquired.

Here are my current favorites: For beef: mesquite, red oak, red wine barrel staves, bourbon barrel staves (the barrel staves are white oak) For anything else: pecan, peach, cherry, apple All of the above can be found at Fruita Wood, with the exception of the red wine barrel staves. Have tried the following and didn't really care for them: grape wood, mahogany, maple. Some others like them, but I wasn't crazy about the flavor profile.

    Porchetta

    Tried my first Porchetta this week. I went with a non-traditional recipe that used the pork belly, but omitted the loin. It was awesome! I will definitely do it again. The skin on the outside crisped up nicely and the meat was luxuriously tender. Super easy!
  5. I'm all in on Fruita as well. The only thing they are missing for me is red wine cask staves. However, they do have the bourbon barrel staves that are nice.
