  2. @KevinD - I used a couple of sheets of 1/2" OSB and 3 friends to move TheBeast around the house to the back porch. It is decidedly NOT a job for one. It can be done, but it would be a helluva workout. If there is any kind of slope, forget it! I bribed my guys with beer and BBQ. They are serious BBQ fans so it was a no brainer who I called!
  3. @BBQKaeding - nicely done! When I throw big galas over 20 folks, I tend to send leftovers home with guests rather than keep everything. I'm not a big fan of that much hiding in the leftover bin. That has changed a bit with my purchase of the Anova Sous Vide. That makes rewarming leftovers a snap and it preserves the original flavor and texture. Thats a very nice gathering and an even better menu for them! Kudos to you.

  6. Stunning shot! Perth was my first stop when I first hit Australia almost 35-40 years ago. What a great town! I couldn't buy a drink (Shout)! And those crazy Aussies drink scotch out of ice tea tumblers! But a finer group of folks you've never met. They are a MUCH different group of blokes from the guys on the other side of OZ. After all is said and done here in OKC, I may just have to go down under for a LONG walkabout.

  11. Tony, those pics are out of this world! I love the marketing shot. That really a shot that shows what can be done with a KK. The plated money shot left me drooling, and I'm not that big a lamb fan. Kudos my Friend!
  12. I absolutely LOVE stuffed figs. They are a wonderful taste especially with the counterpoint of the mildly tart taste of the cheese. I also like just a hint of spicy heat ... something like jalapeño or cayenne pepper.

  15. I love stuffed figs! It's a favorite around here and they disappear in a BIG hurry. I'll often do cream cheese with some finally diced Jalapeños mixed in. I'll also wrap the figs in thick sliced and peppered back. There area a thousand variations and i've done at least 1,500 of 'em! I"m gonna try this goat cheese variant. Thanks, Tony!

  22. AMEN! Another engineer in the crowd ... welcome to the warped side! However, if you're like me, when you do get your KK, you'll wonder why you waited so long and you'll find that backyard cooking just got easier and your cooking abilities just got much better! My KKs have made me a MUCH better cook than I ever was on any other cooker I've ever owned. And I'm so tight I squeak when I blink!
  23. +1^ Buying fine, superfine, and ultra fine sugar is a waste of money. When I need any of those grades, i just put the sugar in the Vita Mix or food processor and WHAM! Problem solved.
