    Easter Butt

    Both familia's are coming over tomorrow for a Easter egg hunt. I'm in charge of the protein, pulled a Berkshire Boston Butt (9lb) from the freezer on Monday and prepping Murphy (Charlie Murphy - RIP) for the over night voyage. Cooking the shoulder on the main grate with foil on the lower grate at 235* and smoke pot loaded with Pecan splits. I'm thinking fat cap up, do you all agree? My rational is the heat is farther away than my old Big Joe and I burned the bottom of the butts before fat cap up. Trying a new rub today, sugarless...found it on Amazon. More to come....

  5. I just bought some boneless short ribs from Costco for an upcoming taco cook. Would you have been able to shred the beef like a chuck roast? Any suggestions on how to cook/smoke the short ribs for tacos? Sent from my iPhone using Tapatalk Pro
  6. Had a diffuser below the brisket (previous cooker KJ Big Joe). Maybe the firebox being closer to the meat on the KJ was to blame? Sent from my iPhone using Tapatalk Pro
  7. I've had success with cap down around 250/275 until probe tender (200ish) I've had fails with cap up, burned the naked flare pretty good...the point was good but a crispy flat wasn't good. This is in a Kamado by the way. Sent from my iPhone using Tapatalk Pro

  9. I cut it down the middle of the boomerang and turn sideways for across the grain cut for sure. He told me SRF, I'll go back when we entertain again. He's the only one in town with Wagyu so I will have to deal with his attitude.

  14. Oh my goodness, Wagyu is unbelievable!!!! Look at this I've had a lot of prime Tri-Tip but this Wagyu is on another level. Outside of the hassle from the butcher this is awesome!!!

    Wagyu Cook

    We have a local butcher that carries Snake River Farms Wagyu and I've been eye balling their Tri-Tips. Picked one up today, though it was a bit of a hassle...the butcher was super hesitant to show me all of his Tri-Tips. He had 2 in his display case and I asked if I could see the rest he has so I could pick the one I wanted. He gave me about every excuse in the book why every roast is the same, blah blah...he had the nerve to ask why I was giving him a hard time, I reminded him I was the customer and wanted to pick from what he had. After going back and forth with him I settled for this 2.5lb roast from the display case. He gave me the guilt trip that he would go get them, I was done with him by then. Rant over, it just rubbed me the wrong way when I'm paying $80 for a roast and wanted to survey the amount of marbling each roast had. More shots coming tonight

    So my wife tells me she is going on a sales pitch and the company is the largest "butcher" in Michigan. This company is going to advertise for job openings (wife is a sales manager for a TV station) because they can't fill the amount of work they have. This company supplies, Costco's, Meijer, etc...in Michigan. So she gets the tour of all the different aspects of the business and says to me, I have never seen that much blood ever!!!! Well they signed the proposal and came in to shoot the Commerical and brought these for her I have 2 of these, what do I do with them?
