Once you get your shipping confirmation, you can check out marine tracker sites to see how it’s travelling. I think it will stop in Singapore then onto freo. Mine managed to get a earlier transfer from Singapore and so came early. I am sure it came even less than 2 weeks. Jarrah is native to the south west of Western Australia. It gives red and pink hues in terms of colour. The old stuff is very heavy. New Forrest growth is still heavy but not as bad as the old Forrest stuff. This timber was shipped to the uk to be used as rail sleepers. Each sleeper would weight over 100kg and some sizes 150kg. Even after 100 years these untreated sleepers are ok. In Australia we use them as floorboards, roofing, jetty’s, decking etc. people recycle them. The legs on the table were from power pole attachments - also 50-60 years old. Still great condition but greyed due to weather. Sent from my iPad using Tapatalk

I ended up getting a roti spit so did it on that Try what Aussie said and put it through a skewer and then into the cradle. Either way it turn out great Sent from my iPad using Tapatalk

Finally finished off a side table for the KK. It’s not quite the quality of Dennis teak work though. I had some leftover jarrah slabs from a buffet table I made. I sanded this down and filled the imperfections. I nice satin varnish bought out the red and pinks in the jarrah slabs. The legs are old jarrah power posts. These had aged badly so I had to cut it back by a few mm. The jarrah was a reddish brown. Again that was varnished. These post are old jarrah and were super heavy. Jarrah is a hard word and working with it can be hard due to the weight and hardness. I love the colour though. Sent from my iPhone using Tapatalk

Bruce, you can try another iconic Aussie thing. It’s called the Tim Tam slam. Tim Tams are a tasty chocolate biscuit. Take a small bite out of the opposite corners of the biscuit. Dunk the biscuit into your tea or coffee and use the biscuit like a straw. Eat the biscuit before it gets soggy. You need to be quick otherwise the Tim Tam will devolve. Roast duck on a school night. Crispy skin and nice and juicy inside. First time I have cooked a full duck so pleased with the results. Roti worked well. My dad seasoned it. Will need to know what he did. Sent from my iPhone using Tapatalk

The brisket turned out awesome. It has a nice bark and was so juicy. I didn’t take many snaps and it got eaten quickly. So some terrible pictures follow Some lessons learnt... I got a whole packer. The flat on the end although still juicy was dryer than the other side. I used a pizza tray as a deflector. Normally I use foil. Next time: -put in drip pan. At 1:30am in morning I forgot. I had dripping leak through the gas port and bottom vents. - I would put foil underneath at the two ends especially at the flat end. That would help with keeping it more moist. Or even put a foil boat on the flat All in all it was really really good and I was happy with ir. The family loved it. Was very moist and beautiful Smokey flavour. I had a nice smoke ring too.
