  5. Lol. I never did it before so I figure the first time to do it is when the in laws are visiting from NZ. Sent from my iPhone using Tapatalk
  6. I don’t have one yet. Sent from my iPhone using Tapatalk
  7. I just ordered my 40-50 pound pig. It’ll be here in a week and the store will hold until my cook day next Friday. I’m going to have them cut it in half and vacuum seal one 1/2 for a later cook. They’re willing to butcher it however I’d like, but how often do you get to say “just cut it in half from the head down”. Photos of the cook to follow. Sent from my iPhone using Tapatalk
  8. Damn tasty looking ribs. I’m having trouble finding the Dino ribs where I live. Sent from my iPhone using Tapatalk
  9. Pork belly is a fine looking slab Sent from my iPhone using Tapatalk
  10. They look great. Really yummy looking cook. I made trout on the grill last night so my penance is done for the week. I’m making these in the next few days. Sent from my iPhone using Tapatalk

    Oh oh

I only cook for two most of the time but I didn’t hesitate and went for the 32”. If money and space isn’t an issue it’s a no brainer. It’s always better to have the space and not need it. With cooking most of us are adventurous and want to try some cool things. My goal is to cook a whole pig real soon and I can do it no problem with the 32”. Sent from my iPhone using Tapatalk

    Pork ribs

I usually buy pork from a local farm but the pigs must’ve been on a diet recently. Way too thin. I was in my local market which sells wagyu beef for relatively cheap prices and they had these Niemam Ranch extra meaty baby backs. I usually don’t care for baby backs and prefer St Louis but these really are meaty and flavorful enough that I’m a big fan. Sent from my iPhone using Tapatalk

Thank you both. Here is my oldest double fisting. [emoji23] Sent from my iPhone using Tapatalk

    Pork ribs

Did a low n slow with applewood smoke. Used a Memphis bbq sauce and a mustard bbq sauce on the other half. Sent from my iPhone using Tapatalk
  16. Tried finding something similar here in the states. No luck so far. You got me excited to do some fish. I have four days of rain ahead so doing a rack of ribs as my last meal for a few days. Sent from my iPhone using Tapatalk
  17. For some reason they won’t “accept” my whole pork loin photo. Is it because it’s sort of phallic? [emoji23] My loin was pretty small so couldn’t stuff too much into it, but came out really well. Thanks for the dinsperation Tyrus. Sent from my iPhone using Tapatalk
  18. Just started it going. Pulled the drip pan I use as the deflector. I’ll let you know how it comes out. I added a little provolone. Sent from my iPhone using Tapatalk
  19. How long at 350? I just brought a pork loin home and was thinking of a recipe. This might be it but I’d have to run back to store for the prosciutto. Fresh spinach I presume? Anything I should now to cook this? Sent from my iPhone using Tapatalk
  20. Never made beef ribs as I usually make pork. Those look tasty as heck. Have to give it a try. Sent from my iPhone using Tapatalk
  21. I bought mine sight unseen and have no regrets. I’ve had it about 1 1/2 months and I use it 4-5x a week. There is a learning curve, but everyone here is very helpful. I have a 32” and the only change I’d make would to probably not order the smoker if I could do it over again. It’s great when it works but too often the chips go out. Other than that everything about it is incredible. Sent from my iPhone using Tapatalk
  22. Thanks Tony! Pricey little critters but I’ll give it a go. Sent from my iPhone using Tapatalk
  23. Well done! I was wondering where you got sprouts for 89cents a pound. At sprouts. Lol. Where’d you get the Tasmanian berries from. I want me some purple crack to try. Sent from my iPhone using Tapatalk
  24. I just went with a 32” sight unseen as I usually regret not upsizing when available. I cook for 2-3 people but have the option of going much bigger when warranted. Also, the indirect heat and searing really easy on the grill is a big plus. Sent from my iPhone using Tapatalk
  25. Damn fine pic tutorial. Well done! Sent from my iPhone using Tapatalk
