18 hrs on a load of lump is no problem, at the 250* range. These pics show my standard fill of lump for a long cook: http://www.komodokamado.com/forum/viewtopic.php?t=1567 After cooking a couple of butts for 19 hours, I still had about 1/4 of it left.

Thats how we used to make it in the restaurants I worked in, too. We would load up about 10 half-sheet pans at a time and load them into the convection oven.

Yep, sure will. Dennis has advised one or two others to drill it out if needed. Might try drilling from both sides and meeting in the middle to avoid any chips on the inside.

I leave mine uncovered. I use it daily when I am home, so a cover would just be in my way. Plus, the tiled cooker is much more attractive to see on the back patio, than a covered cooker. YMMV. I leave the thermometer in both of my cookers as well. It hasnt hurt the old POSK thermometer after all this time, and I would rather have the hole filled with a thermometer than the daily Florida rains seeping in through the hole.

Sanny...My POSK does the same thing occasionally. Since the POSK has an open tube going from the outside of the grill, things like to get in there and take up residence. If you pull your gas burner all the way out of the grill, you should be able to look through the holes directly on the end of the burner, and see through the tube. If you cant see lots of daylight, you have spiders or something living in there.

Not arguing that at all - just saying I like the integrated hinge on the OTB better than one of these. I would trade my POSK, cracks and loose tile included, for a classic KK

I came over with all the skepticism I could muster! Now, I have a OTB sitting next to a #5 POSK that has cracks all over it. In my experience, the OTB shape doesnt distribute heat better or worse than the classic shape. It can still achieve hot spots in one area. I do find that it is easier to maneuver the food on, possibly because of the larger straight area in the front. Maybe its an illusion....just my experience. I can also see that the OTB really is the only way to fly with the KK because it fully integrates the spring into the shape and body of the grill. If for no other reason than this, I prefer the OTB over the classic. The classic shape has the spring encased in a housing that hangs off the back of the grill. Doesnt looks nearly as refined...more like an afterthought than an integrated piece of the grill.

Eric, since the above was your first post, you mat not be aware that "sybil" is not a standard tile color. The slate tiles were purchased locally by Trish, and then shipped over to Dennis to tile her cooker with. Just in case Curly's post made it sound like the tile wasnt included with your purchase

Congratulations on your new arirval! The delivery guys are usually pretty accomodating. Mine put the whole crate on a hand truck and rolled it around the house through thich St Augustine grass! He couldnt do it alone, I had to help push and keep it from tipping

You can also check your local kitchen wares store for a roasting rack, like you would use for a turkey. If you put it on your grill inverted, it works great to hold the ribs upright in the slots. You can get them in various sizes usually $10-15 for the big ones. Something like this: I had a couple of true rib holding racks, and they are all a PITA compared to a sturdy roasting rack. The roasting rack allows a little more maneuverability between the racks as well in case you want to sauce them (Shhh...dont tell DJ) or move them around.

I havent done it personally, but I am sure you can find all sorts of recipes and descriptions over on the BGE list. I have done bread though...I would try it indirect, just as you would in your regular oven.

I grill salmon fillets regularly. I like to skin mine before cooking, but I just give them a good coating of blackening seasonings, and grill at medium to medium-high heat, direct, on the main or lower grill (depending on how hot my fire is, and what I want to cook with it.) My best advice whenever cooking fish...heat your grill, then oil the grate with a rag dampened in cooking oil. Scrape/clean the rack if necessary, then oil again just before adding the fish. This will ensure even the most delicate fillets release easily. I actually oil the grate before I grill anything, but its a necessity when grilling flaky fish!

You could have asked for a new one, but you would have gotten one from the same batch, and had the same issues. There are plenty of times I return items to the store and go get one from elsewhere - Im not faulting that behavior. I am just trying to point out that HOF got caught in the middle here, through no real fault of their own. We ordered goods, and we got them promptly. Sometimes doing business online means you have to operate under different expectations. I bought a huge-ass TV online. I saved over a grand, plus I avoided sales tax by doing so. If it has issues, I will be calling Sony to send a technician to fix it - not loading it on a freight truck back to NY. The same would have been the case with Best Buy or Curcuit city, too. They would have told me to call Sony to send a tech. I will agree that if anyone wants a grillfloss, they should consider buying direct from GrillFloss. But only because they will likely receive a different revision of the product, not because of any inherent defect in HOF's service.

So you asked for remedy - to return it, or to exchange it, like you would have if you carried it back into best buy? Or did you just state the facts - "this has a problem" and accepted the response that HOF would address it with the manufacturer on your behalf, then went ahead and handled it yourself? How is this the merchants fault? You posted here (on Monday) that you sent HOF pictures on Sunday night. On Monday you posted that Grillfloss had already responded to a direct email and a replacement was on the way. At that point, what more did you want anyone to do? If HOF did contact the maker, they were likely told that it was all taken care of?

Im not sure you are being fair to House of Fire...how could they have any control over the rusting, and what remedy could they offer other than other identical unit? FWIW, before ordering from HOF, I tried ordering direct from GrillFloss, and found the certificate on their commerce page to be invalid. (I let mike know, and it has since been corrected) You can also buy in bulk from the grillfloss page, which is surely what HOF did. I cant fault HOF for the lack of a retail package, or the rusting of the blade. They are just retailers. I am just thankful the manufacturer is appropriately standing behind the product; as they should. BTW...mine looks just like yours did, so I will be calling Mike again.

Well, if I saw a someone was in my back yard stealing the KK, i would have to resist using force as well. Now, if they went after the old K, I would offer him a beer as soon as he had it loaded

Amen! Plus, if I got rid of it, then I wouldnt be able to witness its decline, and ridicule the manufacturer relentlessly about it I probably will move to a different area of the patio, though. You gotta admit...it does look sort like some artwork the kids brought home from kindergarten compared to the KK!
