  5. I think I'd have cut the uncooked steak in two pieces, then done one pink for myself, and one grey for the ladies. But you chose well if you were going to have just one slab.
  6. Yes for low and slow and for pizza/bread/or other recipe that uses cooker as an oven. No for grilling steaks and the like. (yah, like I'm some expert... lol)

    Thanks! I ordered from sourdo.com (Italian), and that's a great idea about the mozz from Costco. But I do think our local Weggies has some VERY fresh mozz. We'll see. If not, I'm surrounded by authentic Italian delis and markets. A blessing of living near Philadelphia. I'm making a dough now from Reinhard's recipe (from American Pie), and will try it this week. He's got a sourdough recipe, as well, but I don't have the mother yet. I'll do his Neapolitan, and will let you know how it goes. I decided that I'd rather have a different sort of dough (puffy and crackly) than the kind with sugar and oil in it (like Puck, and like American Pie's "American Pizzeria" recipe). Anyway, the recipe makes several dough balls, and gives instructions for freezing for a few days. That'll save me time the night before, when I'll be a lunatic tidying the already tidy house. Why do we do this to ourselves?? lol (he's handsome, and a PhD in chemistry)

    Thanks, Mike. I'm thinking my usual (Wolfgang Puck-like) dough recipe. Not a good time to experiment, if company's coming. It cooks in a few minutes, if the cooker is hot enough. I'm shooting for over 500*. The key to the dough flavor is to make it a day or so in advance. Then it gets that fermenty taste. But if I make some later this summer for myself and someone I'm NOT trying to impress, then I'll give the other stuff a try. Sounds yummy.

    I'm glad this post got a bump. Blind date this weekend went well. So, I invited him to supper next week. I happened to mention that it's possible (and tasty) to do pizza on the grill. Of course, he'd never heard of such a thing. He said he'd like some! What was I thinking!! Ok, calm... I've done pizza on the grill. I like pizza on the grill. It's not difficult - except on second date with nice new guy. Oy!! I'm thinkin... fontina, canned whole tomatoes (drained), artichoke hearts, caramelized onions, a few strips of prosciutto, fresh mozzarella, fresh herbs (of course). Salad from the garden, and a bottle of Prosecco. And berry fool for dessert. Speaking of fresh mozzarella, have any of you tried adding that near the end of the cook, so it gets melty, but not browned? It's so yummy when it's just a puddle of fresh mozz. Anyone have thoughts?
  11. Unless the cooker is going to live in on the tile next to the oriental carpet (and I don't see why it wouldn't want to), a Johnnyboy cover for your cooker is a perfect thing. Shoot - it's perfect even if it IS living in with the oriental carpets. Bet Johnnyboy could make you a matching cover for the carpet!

  14. Probably you didn't want to put your guest to work for his/her supper. So long as your guest imagined the same meal that you did, you're probably ok.
  15. On Memorial Day, I cannot thank those who died in the service of the country. But I can say thank you to those who lived. Thank you. :* And a special thank you to those men in the China Burma India theater in WW2, in particular the 7 men of Duck Mission. Seven heroes parachuted out of a B-24 "Liberator" into a Japanese "civilian assembly center" (aka concentration camp) after VJ day and liberated a 13 year old girl named Mary. My mother. And her 2 brothers, her sister, her grandpa, and 1500 others. xo You can read Mary's story here. She later tracked down those of the seven who were still living, and the widows of those who were not. She thanked each in person. Weihsien Camp, Shandong Provence, China August 17, 1945. Liberation day. (you can see 2 of the GIs in the middle of the photo, wearing sunglasses.)   16. It was very good, Duk! I forgot to put the corn on the grill. No one noticed we didn't have any. We decided against salad - too healthy. Fresh fruit for dessert. M said to tell you that she, my harshest critic (yahright), said it was exquisite! I sent her home with a Mommy bag for tomorrow's supper.
  17. Ok, camera reappeared. Teriyaki bacon asparagus rolls (oh wow, they were good) And a delicious supper was had by all.
  18. Here's a start. I just made the teriyaki sauce, and rolled the asparagus in bacon. I'll do those on the grill and baste them. Phone pic - someone's mother took the camera again. Baked tatoes, corn on the cob, and steak all going on the grill. To be served with salad and fresh strawberries. If the camera comes back, it won't be imaginary.

    I wonder if "hers first" will accomplish what you want. Normally I absolutely agree with hers first. But the first pizza will pull some of the heat from the stone, no? Second would be softer, unless you give the stone some time to reheat. Musings, of course...
