  3. Approve of the adult beverages, but would suggest you "up your game" to something with a bit more going on (craft beer guy and homebrewer here!)
  4. Second the Syz's smoker pot. I've had mine for years now and use it all the time on longer cooks, as it spreads out the smoke generation over hours, so you don't have to keep tossing in wood chunks. I use a combination of wood chunks and wood pellets in the smoker pot. Pellets catch quicker as give smoke fairly quickly and the chunks are the second wave and last longer. I do toss chunks on the coals for short cooks (under 2 hours) and just wait for the smoke to clear up before adding the food to the grill. I also own the KK smoking attachment. I only use pellets in it, as wood chips don't stay lit very well and you have to keep tending it and restarting it - PITA. I typically only use it for cold smoking (salmon, cheese, nuts). I have used it for brisket cooks, as it can take a lot of smoke.
  5. Who knows how they decide? Last one I sent went straight from Chicago to Japan and then to Perth. This one seems to have a mind of its own and is apparently homesick as the tracking number says the package is back here in Cedar Rapids!!! WTF???
  6. Yeah, that motor is almost 2x as big as the one that most of us use! But, we don't have a rotisserie cradle that weighs 50+ pounds - unloaded, either!!

  9. Are they actually still in business?? My buddy that I gave my old POSK to, tried forever several years ago to get a new spider cap for the K7 so he could fix the crumbling top on it, but they never came through and he finally gave up on it.

  11. Not much to it really. Jasmine rice quickly toasted in coconut oil (rice pilaf style), then toss in a bit of turmeric powder and onion powder, then added the chicken stock (2:1 ratio - 1/2 cup rice = 1 cup stock), bring to a boil, cover, lower heat to very low, steam for 20 minutes & fluff.

  13. That looks amazing, MacKenzie! I skated tonight. Started out having dinner under the gazebo - nice evening. I was almost done when it started to darken up and I could hear thunder not far in the distance. Grabbed up everything, covered the grill, and went inside. I had just sat down at the dining room table to finish dinner when the bottom dropped out! Chicken Tikka Masala with yogurt raita & toasted almonds, with turmeric coconut rice and pan sautéed green beans with za'atar.
  14. I generally put down "BBQ rubs & sauces, Spices." Post Office folks never seem to question it.
  15. @tekobo - not sure what a UK Costco might stock, so maybe they do carry grits over there?? But, if all else fails, maybe you can score one of those killer Prime bone-in/cowboy ribeyes for $12.99/lb for their Father's Day special!

I'm not familiar with any Portuguese influence in the SC coastal area, but who knows; it was a serious melting pot of African and UK (a good Scots-Irish influence), with a soupçon of Spanish and French. Shrimp & grits is not what I'd call an "everyday" meal, but not exactly reserved for very special occasions either. Just say, whenever you feel like it!

  19. Take measurements of the firebox area and talk to Dennis. He has experience with fixing/upgrading these old kamados.
