The steak was not very thick so a quick direct cook was all that was needed. There was some peach wood that was left in the charcoal basket from the brisket cook so I used it up. For those who have never tried peach wood give it a try you won't be disappointed. I recently purchased some sugar maple too and I'm liking that a lot. I have a brisket soaking in a Montreal smoked meat brine that I can't wait to use the sugar maple on. Finding the smoking wood shack that I believe Tiny Fish has used has been great.
