Shrimp And More

This started out as white wine, shrimp scampi but then I went a little crazy. Let's get it done.

Started by marinating colossal shrimp in white balsamic vinegar, lemon and a generous amount of Old Bay.

In my ceramic Caserole pan I added 2 diced Roma Tomatoes, fresh lemon, a few Tbsp butter, 1 Tbsp oil, 1 Tbsp finely chopped garlic, and some white wine.

Cook on the KK, covered, for about 15 minutes at 375*. Pull, then add 1 can water chestnuts, green peppers, baby Bella slices, and the shrimp (drained but not rinsed).

Cooked, covered, for another 15-20 minutes at 375*. Half way through I Stired it. Almost done.

Served with Jasmin rice and pan seared green beans.
