Chinese New Year ribs and suckling pig

Recommended Posts

Ok, I did this cook back on the 7th to celebrate Chinese New Year here in Singapore. Wanted a real center piece for the table and my wife reminisces about her grandfather's tradition of cooking a whole pig every year when she was a little girl in Northern China... So we had to go pig mad!! First up the ribs:

Dry brine over night before adding the (salt less) home made rub: it's Meathead of AmazingRibs website's "Memphis Dust" recipe

And now for "this little piggy"

Double decker Pork tower!!!

It really "hogged" the limelight that night!!

Wouldn't be Chinese New Year without 200 home made Chinese dumplings from SWMBO and mother-out-law:

Makes for an epic spread:

And a less traditional 'adult beverage' to round out the evening

If you can see straight by midnight then ya 'ain't trying!!

Let's just say the morning after was a lot less fun....

But Angie always steals the show:

æå–œå‘è´¢and happy new year everyone!! (Yes: I get 2 excuses for New Years debauchery and take full advantage of that fact!! )

Great cook Oliver and thanks for fixing the pictures!  The one of your 32" with the pig on top is fantastic.

Looks like your baby is having a wonderful start to the Chinese New Year!

Fantastic! Where did you buy the pig?

I should have credited you: Tiong Liang Food - thanks for the recommendation!

80 bucks for a 10lbs suckling pig.

Got a 10kg box of frozen ribs too!

Great cook and wonderful family pictures!   Many thanks for sharing!!

My family never had an ethnic "food culture" when growing up....Kraft Macaroni & Cheese was a treat for us.  My first daughter married into a family of great cooks from Puerto Rico and Southern Georgia.....talk about tasty family get-together s.  My second daughter married into an Irish Clan.....the family food is great also and they sure like their whiskey.

Fantastic to see your family food.

So glad that the pictures are finally up. That cook looks delicious, and it looks like you had a great Chinese New Year.

新年快樂ï¼

P.S. I would love more details on how you prepped and cooked the whole pig. ^_^

I'm thinking that pig would fit in my 23" no problem, what do you guys think?  I had not done this cook yet b/c I figured a suckling pig would be too big.  I don't think so now?

Cookie: it would certainly fit, they aren't so big

@Wilburpan: very simple - I used salt and pepper in the cavity and salt in the skin the night before, then slow roasted for 4 hours at a little under 300. Then cranked it up for the last 30 mins at 500
