  1. Nothing special here but I did want to run this test. Double batch of dough divided by 2. Also used a different sauce than normal. Next time I'll divide by 3 and tweak the sauce a bit. Also not thrilled with the board the pizza is sitting on, not enough contrast with the pizza dough. . The sauce was too watery. You can see how it mixed in with the shredded mozzarella cheese on the ham and black olives. On the one with green peppers I used a fresh mozzarella cheese ball that I sliced by hand so the watery sauce didn't effect the outcome as much. Sent from my XT1585 using Tapatalk
  2. Cook as many times as you want at 350* or less before the burn in. You just need to do the burn in before you start doing high heat cooks. You can do a high heat cook while doing the burn in. Sent from my XT1585 using Tapatalk
  3. Interesting on the red and green bag variety. I personally don't like huge pieces of lump. I consistently get better results with a bowl full md/lg sized pieces compared to XL pieces.   6. Excellent, glad you jumped aboard, you won't be sorry with the decision. I agree a lot of people put money into high end cars. I'm just a basic transportation kind of guy for cars but I love my KK's. . And don't worry you can't mess up a KK. Only one really messed up KK that we know about and that was extreme user abuse. The burn in sounds scarey but it's really no big deal. . My first KK I didn't get any notification until it was an hour away from my house.   10. If I got this correct 22" with high capacity dome, 23" with extra grate. I don't own either so I have no skin in the game but........ . My 19" is a high capacity dome my 16.5" is not. With that said you really want a high capacity dome especially if you want to do some baking. . The difference between 23" v. 22" is only half an inch on each side. Grab a ruler and check out half an inch, the difference is not worth talking about. 99% of cooks that won't fit a 22", won't fit on the 23" either, but the high capacity dome will definitely fit more up top and you can always buy the extra 3rd grate if you really feel it's needed. . Besides that diffusers and drip pans can sit directly on the lump basket handles. No need for an extra grate down below to hold them. . Sent from my XT1585 using Tapatalk
  11. I too do not look at kamado cooking as a hobby any more than cooking on/in a stove/oven is a hobby. Right now it's all new and exciting to you and that may wear off some over time. Even if the new factor wears off you're still going to go back to cooking on a kamado every time you want a grilled or smoked meal. So much nicer to use a quality kamado for those times. . With that said, a lot of us are fairly addicted to kamado cooking and could probably throw our oven away if we had too and never really miss it. A KK will take that cake baking to a whole new level. Mrs skreef has done a triple layer carrot cake on the KK that was to die for and I'm not a big carrot cake fan. Sent from my XT1585 using Tapatalk

  18. Over the last day or so we seemed to have a population explosion. There are now about 10 hummingbirds. I took the feeder down today for a few minutes so I could raise the hanger a little bit. They were mad as hell and was dive bombing my head - LOL . At the end of last summer my second feeder broke. Next weekend I need to go buy a new one. The feeders I use are fairly large, have a glass reservoir with a wide mouth so you can easily get a bottle brush down in them. I hope I can find another one like it next weekend.   20. My challenge cook for May. . A stack of lamb, potato, and cheese layers served with a tomato sauce. . . . . Got the 19" KK flying low and stable. . . I made a pesto style feta cheese spread. . . Simmering the tomato sauce. . . Pre melted some Muenster cheese. I tried doing it in a pan but that was a complete pain. Then my brain started working and I threw it on the 200* KK for a few minutes. . . Parboiled some monster potatoes until just Al Dente. Peeled and cut into potato disks. Griddle seared to crisp them up a bit then put them in the KK to finish cooking. . . Seasoned lamb patties griddle seared. . . Nows the fun part, building the Napoleon. Start with a potato disk and feta cheese spread. . Add Muenster cheese. . Lamb patty and feta cheese spread. . More lamb, potatoes and cheese to finish it. . . Put that in the KK for a few minutes to melt the cheese a bit. . . Served with tomato sauce. . . I hope you enjoyed this cook because the Reef's loved it Sent from my XT1585 using Tapatalk
