I buy one or two cook books every once in a great while. Cook just a couple of recipes from them and consider it almost a waste of money. (if I get one killer recipe per book I'm golden) I usually take my inspiration from the Internet and wing it from there.

I will say it again - I HATE HOTDOGS - LOL Nice cook anyway. There is a story behind that statement but on my mother's death bed I will attempt to never tell the story again.

The rule originated when one member made the forum his personal soap box to completely bash KJ customer service. The guy kept going on and on even after Bobby got on the thread and tried to make things right. I actually think he started 2 threads with the same intent if I remember correctly. I would much rather see bad apples delt with on an individual basis rather than punishing the entire group. Funny though some threads that talk about customer service gets shut down while there are others that don't.

Next time we do sausage gravy for breakfast I'll get Mrs skreef to cook up some Cats Heads instead of the standard buttermilk.

Good catch in the pictures. Yes I am missing it and yes that will be remedied soon. Can't remember why I took it out and now can't find it. I'll grab one next time I go to the hardware store. Had forgot all about it until I was behind there doing the adjustment. It had barely moved the whole time it was out.

Mrs skreef started out by cooking Cats Head Biscuits on the KK before the chicken cook. A Spatchcocked chicken. Dinner is served. Spatchcocked leg quarter. * Cats Head Biscuit - poke your finger in the middle and fill with mapple syrup. * Mashed Baby Dutch Yellow potatoes with gravy. * Tsunami Spin pan fried mixed vegetables.

Awesome cook. That is how I like my tuna, a nice sear but still rare/md rare on the inside. Really scrumptious looking.

Thanks everyone. Me and Mrs skreef had a great day yesterday. Last coat of primer on the porch. Got that finished earlier then we thought so we went for a nice motorcycle ride. Got home, did the spring adjustment then finished the day with this meal. Yup all around a great day.

This started out as white wine, shrimp scampi but then I went a little crazy. Let's get it done. Started by marinating colossal shrimp in white balsamic vinegar, lemon and a generous amount of Old Bay. In my ceramic Caserole pan I added 2 diced Roma Tomatoes, fresh lemon, a few Tbsp butter, 1 Tbsp oil, 1 Tbsp finely chopped garlic, and some white wine. Cook on the KK, covered, for about 15 minutes at 375*. Pull, then add 1 can water chestnuts, green peppers, baby Bella slices, and the shrimp (drained but not rinsed). Cooked, covered, for another 15-20 minutes at 375*. Half way through I Stired it. Almost done. Served with Jasmin rice and pan seared green beans.

I haven't been taking pictures along the way but once complete with take some pictures with a second KK in place.

Since getting my 16.5" KK earlier this year my hinge spring has slowly relaxed a bit so I wanted to adjust it. Here is the hinge and spring cover. I had Mrs skreef hold the dome open about 3/4's the way. Using a 5mm ball end Allen wrench I loosened the 2 bolts about one turn. Once the two inner bolts were loose I was able to remove the back spring cover. Here is the top of the spring. Note the two bolts that I had loosened. Here is the bottom of the spring. At the bottom of the picture you can see the 2 pins that hold the bottom of the spring cover. In the middle of the picture is the bolt going up through the bottom of the spring. Open the dome, then using the supplied wrench tighten that bolt until you achieve the desired adjustment. Check adjustment frequently as you're tightening the bolt. I tightened my bolt 1 turn.. Check each turn.. caution maximum 2-3 turns. (it can snap your hinge) Although I didn't adjust it for full auto opening, I adjusted it tight enough so you can let go of the dome at any time and it will sit right where you let it go at. No smashed fingers with this kamado. This was a very simple procedure and took me longer to take the pictures then to do the actual adjustment. Once adjusted replace the spring cover and snug down the two upper bolts. This procedure should be basically the same regardless of the size of your KK.
