  8. Congrats erik that’s a beautiful cooker you have there! I know your pain in using another Kamado, I’ve still got my cheap royal and I’ve been spoiled by the KK! Sent from my iPhone using Tapatalk
  9. A non KK cook tonight. Home made stuffed meatballs and home made garlic bread, this garlic bread recipe calls for poaching the garlic then reducing a balsamic and sugar syrup which then gets spread throughout the dough, first time making it and it definitely won’t be the last! 10. Ah it’s next weekend, I thought it was later in January, there’s usually a few coming up this time of year. https://perth.beerfestivals.com.au/?utm_medium=bolster&utm_campaign=bef872&utm_source=googlesearch&gclid=EAIaIQobChMI4dec5qbq3wIVVSUrCh1u7wdoEAAYASAAEgLBnPD_BwE Sent from my iPhone using Tapatalk
  11. The KK definitely got a work out over the Xmas break that’s for sure! Are you going to any beer festivals that are coming up, would be good to catch up for a pint? Sent from my iPhone using Tapatalk
  12. Looking awesome!! Sent from my iPhone using Tapatalk
  13. Thanks Mac I sure did, all of the recipes from Steven Raichlen that I have tried have been great, gotta start working through more. Sent from my iPhone using Tapatalk
  14. Thanks Bruce, I like this recipe. Sent from my iPhone using Tapatalk
  15. Sorry, forgot the plated shot! Sent from my iPhone using Tapatalk
  16. I cooked Steven Raichlen’s Sriracha Maple drumsticks tonight, such a simple recipe but so tasty! Started off with a bit of salt, pepper and chilli flakes on the drummies, then onto the KK. Meanwhile, back inside I made the sauce. After the drummies have nearly cooked, glaze them with a little of the sauce and then cook for a further 10 minutes to let it set. Nice and simple Saturday cook, but tons of flavour. Sent from my iPhone using Tapatalk
  17. Thanks Dennis that makes sense, I suppose the moral of the story when using coco-char is to light it earlier and give it time to come up to temps using the same vent settings? Sent from my iPhone using Tapatalk
  18. I haven't ever used Coco-char but i have used a product that looks similar called Honeybrix. I've noticed that i need to open the vents more too when using those compared to lump. As the others have said, i think the fuel is a lot more dense and needs more airflow to get it going, i usually put a small pile of lump under the honeybrix to get them going.
  19. It is very easy, if you buy the bao buns it would be minimal effort, home made bao’s are nicer though I think. Sent from my iPhone using Tapatalk
  20. Here you go, I love all of the seasons of project smoke, and his new one project fire: Sent from my iPhone using Tapatalk
  21. My pleasure, he also cooks these on project smoke on a KK, have you seen that episode? Sent from my iPhone using Tapatalk
  22. Here’s the recipe: https://barbecuebible.com/recipe/pork-belly-steamed-buns/ Sent from my iPhone using Tapatalk
  23. Go for it Steve, you won’t regret spending the time to make them. I use Steven Raichlens recipe for the pork and accompanying sauce and the recipe above for the buns, the only thing I do differently with the pork is I cook mine for 3 hours and then instead of slicing it and grilling it at high heat, I wrap mine in foil and cook until it proves like butter, usually another 2-3 hours. 24. Here’s the recipe for the buns: https://www.bbcgoodfood.com/recipes/steamed-bao-buns?utm_source=app Sent from my iPhone using Tapatalk
  25. I do, they’re surprisingly easy to make, all you need is a bamboo steamer to steam them. Sent from my iPhone using Tapatalk
